Owners of Roaring Fork to Open Pork-Centric Restaurant Salty Sow on March 4 (And We've Got the Menu)

Guy Villavaso and Larry Foles, owners of Roaring Fork and founders of Eddie V's and Wildfish restaurants, are bringing home the bacon (and several other pork-centric dishes) to Phoenix early next month in the form of their Austin-based restaurant Salty Sow.

Located at 4801 East Cactus Road in Phoenix, the second location of the head-to-tail gastropub will open on Monday, March 4. Led by Austin Salty Sow chef and partner Harold Marmulstein, the Phoenix location will feature contemporary American cuisine and signature cocktails in a modern farmhouse atmosphere.

Here's what diners can expect along with a sneak peek at the lunch and dinner menus.

Marmulstein plans to feature signature dishes like candied pork belly with collard greens and soy balsamic syrup; milk-braised pork shoulder with white beans, escarole, and pecorino; and chicken thighs with fried smashed potato and neckbone gravy.

"We look forward to introducing our distinctive Southern-style cooking methods," Marmulstein says, "that include braising, poaching, and slow-roasting to all of our menu items."

Other dishes include triple duck fat fries, collard greens with smoked ham hocks, crispy Brussels sprouts, green eggs and ham with grits and Parmesan basil, and Bananas Foster beignets for dessert.

On the libations side, 21 choices of hand-crafted cocktails with names like Miss Piggy, Wallow, and Curly Tail will join a selection of specialty margaritas.

With a dining room akin to a modern farmhouse, Salty Sow will sport décor touches of raw timber, bricks, and butcher-block tables combined with chandeliers, modern seating, and a concrete floor. The restaurant will also have an exhibition kitchen in the center of the restaurant, garage windows, and a patio. Naturally, paintings of pigs will adorn the walls.

Hours: 11 a.m. to 10 p.m. Sunday through Thursday 11 a.m. to 11 p.m. Friday and Saturday Happy hour from 4:30 to 6:30 p.m. every day.
