Tacos may very well be the perfect food, but let's face it, the standard Meximerican fare can get a bit stale after a while. Taco the Town is here to highlight some of the more unusual Mexican finds in the Valley.

This week: Salsa Aguacate from Taco Tote

¿Como se dice?: Salsa aguacate? Isn't that just a fancy way of saying guacamole? Close, but no cigaro. Salsa aguacate is the smooth, spicy cousin of guacamole that makes us want to guzzle it by the pint. We would gladly give up the entire salsa bar for just a couple ladles of this near perfect taco topper. The secret to the best salsa aguacate? A tomatillo or two.

La Comida y El Sabor: At Taco Tote, the salsa aguacate was a milder version compared to La Frontera, Mariscos Playa Hermosa, La Salsita, and other divey taco joints--because let's face it, the best tacos always come from a place that looks just a little shady.

The flavors of this salsa compliment just about any Mexican food. The fatty avocado cuts the abrasive acidity that too much tomatillo can sometimes create, while the serrano heat lends the perfect amount of mouth-tingling picante zip. The slightly thick creaminess adheres to your eats better than regular salsas too, making sure your tortilla doesn't go floppy and soggy. Nobody likes slip 'n' slide taco fillings or the dreaded mid-chew burst burrito. And since it's a sauce, it penetrates all those nooks and crannies, coating everything in avocado goodness.

So the next time you hit up the salsa bar, grab (at least) a couple plastic tubs of salsa aguacate. It's excellent solo on chips, as a quesadilla dip, topping a torta, slathered on each burrito bite, or as the finishing touch to the perfect street tacos.

Bring a bit of México to your kitchen: Salsa aguacate is a great way to stretch how far your avocados can go, especially if you're craving guacamole in the off season but don't feel like paying out the nose for a couple avocados. Bonus! The natural acidity of the tomatillos will keep your salsa from turning an unattractive brownish-gray. No need to toss in an avocado pit, like the old wives' tale about guacamole suggests.
