For the past five years, husband-and-wife team Felipe and Marcela Roldan have run their Colombian hot dog restaurant, Simon's Hot Dogs, out of the Oak Creek Brewery in Sedona. Known for a signature hot dog that comes topped with sweet pineapple, crushed potato chips, mozzarella cheese, and Simon sauce, the closet-size restaurant served street food from the couple's native Colombia.

Now, the couple's decided to move the business south, specifically to a location in Old Town Scottsdale. Later this year, Simon's Hot Dogs will reopen at 4280 Drinkwater Boulevard.

In addition to the Colombian hot dog, the restaurant will serve beef or vegetarian hot dogs with toppings such as teriyaki onions, wasabi mayo, and toasted sushi nori; avocado, Philadelphia cream cheese or tahini, and jalapeños; spicy mustard, mayo, jalapeños, and sauerkraut.

Marcela says the decision to move the restaurant was motivated by a desire to grow. Though being located inside Oak Creek Brewery gave Simon's a built-in customer base, the couple had only a 60-square-foot kitchen out of which to operate. With the additional space at the 1,500-square-foot Scottsdale restaurant, the couple plans to expand the menu to include new items such as French fries with chili, salchipapas (sliced fried sausage, fries, and Simon’s sauce), and a vegan ceviche.

The couple says they hope to open by fall.
