When ordering your bowl of ramen at Umami in Tempe, it's tempting to go with something tried and true. The build-your-own bowl restaurant offers broth bases including shio (sea salt) and shoyu (soy), but for a more one-of-a-kind flavor go for the paitan, made with pork and chicken bone.
The milky soup is a hearty base that has lots of meaty flavor. We like to keep the rest of our toppings simple with just pickled bamboo shoots, scallions, fish cake, and seaweed so you can fully appreciate to flavorful soup.
