The tendency is to believe that our desert location makes it hard or impossible to find excellent sushi in this town. Thankfully, that's not the case.

To taste the proof for yourself, look no further than Yasu Sushi Bistro, an unassuming little Japanese restaurant in North Phoenix. Chef Yasu Hashino does wonders behind the tiny sushi bar, turning fresh fish into works of culinary art. One of best examples of Hashino's skill is the simple but delectable salmon nigiri sushi done Yasu-style. The chef barely sears the pieces of fresh salmon and adds just a touch of sweet ponzu sauce. Topped with a sprinkle of finely sliced green onion, this dish becomes something great.

But the best part of the Yasu experience might be getting to interact with Hashino. If you sit at the bar, he'll deliver each of your dishes by hand -- and often will come back to make sure you enjoyed it. Don't be surprised if he gives you advice on how to eat your fish, too; Hashino is strict about using the proper amount of soy sauce on each sushi roll.
