Travel Latin America with Province at The Westin

Ever been to Peru or Cuba? Well, now's your chance. Province restaurant at The Westin Phoenix Downtown has extended its Latin Passport Dinner Series, a tour of several Latin countries with a stellar menu created by executive chef Randy Zweiban. Seats for the remainder of August (Peru) and September (Cuba) are a surefire way to eat, drink, and have a throughly good time out on the town.

"When pairing wines with the Latin Passport menu, we look for flavors that are exotic and pair nicely with the menu," said Alex Verkruijsse, general manager at Province. "This way, the guest gets the full experience of traveling abroad and being whisked away for culinary evening without having to travel afar." Get the menu and the pairings after the jump.

PERU (August 17, 24, 31) First Course: Red Snapper Ceviche with tomato, corn and sweet potato chips Torrontes, Tomero, Mendoza, Argentina, 2009 Second Course: Arroz Chaufa with Peruvian pork belly, Blue Foot shrimp, summer vegetables and orange mojo glaze Third Course: Grilled Skirt Steak with Aji Rocoto and salsa criolla and sweet corn salad Tempranillo/Graciano, Polus, Rioja, Spain Fourth Course: Sweet Potato and Pumpkin Picarrones with vanilla bean ice cream and chancaca syrup

CUBA (September 7, 14, 21, 28) First Course: Ropa Vieja Empanada with cilantro crema Albariño, Martin Codax, Rias Baixas, Spain Second Course: Camaroñes Al Ajillo with saffron-tomato broth and grilled pan de ajo Third Course: Mojo Glazed Pork Belly with black beans and rice M Blend, Alma Negra, Mendoza, Argentina Fourth Course: Key Lime Tartlet with coconut crema

So, perhaps the wines weren't what you were expecting, but "it's great when the country that we feature on the Latin Passport menu also produces wonderful wines; although we are not always able to source wines from some of our featured regions. It is then that we pair wines that bring the same enjoyment to the palate as the food." says Verkruijsse. For example, for the Cuba menu he looked for a wine that would match the fresh cilantro crema that is served with the empanada. "The Albariño provides that freshness with a strong enough character to stand up to the rich flavors of the empanada dish as well as the flavors of the garlic shrimp featured in the second course," says Verkruijsse.
