Yesterday we met Micah Olson, the sommelier and cocktail artist behind Jade Bar. Today he shares with us the recipe for the Flying Blueberry Sour.

“It’s a variation on a gin sour with blueberries and tarragon,” Olson says. “It’s going to be on our menu in the spring. Blueberries and tarragon are very refreshing and work really well together, and they add this awesome pinkish-bluish color to the drink. It’s like a match made in heaven. It’s visually stimulating as well as mouth-stimulating.”

Mouth-stimulating is right: it’s lightly tart, very herbal, super complex and refreshing, like a cold shower with herbal shampoo.

The ingredients:
13 blueberries
2 sprig tarragon
2 oz. Aviation gin
¾ oz. Lemon juice
½ oz. Simple syrup
1 ½ oz. Club soda

How to make it:
Muddle ten blueberries in a highball glass, then add a sprig of tarragon, gin, fresh lemon juice and simple syrup. Top with soda water and stir to combine. Garnish with a sprig of tarragon and three blueberries, then bask in the refreshing waterfall of flavor.
