US Fries is officially open in Tempe, and according to a press release from the restaurant, it’s the state’s “first poutinerie.”

The shop’s menu revolves around the Canadian specialty, poutine (fries topped with brown gravy and cheese curds), ranging from traditional poutine to variations topped with pulled pork, chicken, bacon, and even pot roast. 

The store claims to use real Wisconsin Cheese and is open until 4 a.m. Thursday through Saturday, to cater to the late-night needs of the ASU/Mill Avenue crowd.

The chain already has a location in Tucson, which opened about a year ago. The president of the company, Thomas Jones, is from Canada.
