Urciuoli isn’t just tremendously talented, he also has an ethos: “I don’t believe in expensive food,” says the former fine dining chef. Making excellent food affordable (or affordable food excellent) was a holy grail of the restaurant industry even before recent price hikes, but precious few can deliver bang for the buck like Urciuoli can. At Source, he builds on his previous work at Noble Eatery and Pa’La, offering fine foods at lower prices by sourcing the highest possible quality of inherently lower-cost ingredients, then carefully preparing and seasoning them with the sensibilities of a fine dining chef. Using heritage grains, pristine produce, tinned seafood and premium vinegars and oils, he weaves pizzas, sandwiches and salads with a finesse rarely seen at the $10 to $15 level. His food is the kind of fresh and satisfying fare that you feel like you could eat every day, and at Source’s prices, you probably can. It’s a style of cooking Urciuoli has championed for over a decade, and 2024 feels like his time.

There’s no shortage of excellent places to find bread baked fresh locally. Noble has been at it for over a decade, and while you can sample their breads at farmers markets and restaurants around the Valley, Noble Eatery showcases how that bread serves as an excellent foundation for a sandwich. The wood-fired deli and bakery is only open for lunch on weekdays, but you’ll understand the midday rush once you sink your teeth into a soft pide (a Turkish bread) stuffed with tuna, beans, potatoes and farro and punched up with a Cabernet vinegar. The menu of sandwiches is small but hits all the right notes, ranging from turkey to an Italian, with breads that can withstand whatever is piled atop them. Be sure not to miss the rotating chef’s specials, which have included Cubanos, meatball subs and roast beef.

Step aside, Bonne Maman. Cotton Country Jams is in the house. Amanda Hawkins’ grandmother started this business in 2000; at the time, the only product was wild Maine blueberry jam. Hawkins took over in 2008, and today, she offers jams, jellies, pickled products, and syrups, using mostly local ingredients and Grandma’s recipes. We keep our kitchen stocked with the prickly pear jelly and the bread-and-butter pickles by snapping them up when we spy them at local farmers’ markets. But the crown jewel of the lineup is the fig jam. Made with figs, lemons juice, sugar, citric acid, and pectin, it’s got just the right texture (not too thick, not too thin), flow, and sweetness. You can also find Cotton Country Jam products locally at Woods & Whites, Sphinx Date Co., Noble Eatery, and Pane Bianco.

A while back, an Australian millionaire famously declared that if millennials don’t stop spending so much money on avocado toast, they’ll never be able to afford to buy houses. To which we say: We think the enormous student loan crisis is probably a bigger stumbling block to home ownership, and more important, avocado toast is delicious and we’re never giving it up, down payment be damned. Noble Eatery, a casual lunchtime spot in midtown Phoenix, is where we like to go to fritter away our financial futures.There are no bells and whistles on the avocado toast here, just rich, chunky avocado with tomatoes and chimayo chile powder piled high on thick slabs of hearty, chewy Noble Bread. It’s filling without being heavy, which is also how you can describe the rest of the menu; it includes salads, sandwiches, pizzas, and other things on toast, all of it utterly satisfying. Who needs home equity, anyway?

And that’s why a true food lover will surely appreciate Jason Raducha’s simple-yet-elegant Noble Eatery, where rustic house-made breads serve as the foundation for excellent sandwiches loaded with imported Italian meats and cheeses and local vegetables. The menu at the lunch spot changes almost every day, but you can count on a concise selection of sandwiches, pizza, smorgas (open-faced sandwiches of Swedish descent), and the Ramon Navarro bowl. The last has become something of a Noble Eatery staple: a bowl of heritage grains like durum white wheat, lentils, and Khorasan wheat mixed with vegetables and seeds and dressed in oil. There’s only a handful of seats, and they’re nearly always full, but we like to think the wait just makes the experience seem all the more exclusive.

Of course, housemade Noble Bread serves as the foundation for most of the food, but there’s also pristine produce, locally grown grains, and imported meats on the restaurant’s ever-changing menu. We’ve enjoyed everything from a seasonal salad featuring grapefruit and marinated celery to a bowl of creamy wheat berries, farro, tomato, and corn in the cozy dining room of this lunch-only spot. Food lovers will appreciate the level of authenticity on every plate — and won’t mind braving the extremely undersize parking lot in order to experience the cuisine.

Why not make sandwiches using our metro’s most celebrated bread? The baker behind that bread, Jason Raducha, doesn’t have to try too hard to make a beautiful Italian sandwich on his chewy semolina roll. But he does. He takes a minimalistic approach to making sandwiches, his creations featuring quality ingredients, smart combinations, with no parts out of place. A caprese ditches raw tomato for roasted, mozzarella for burrata, and balsamic vinegar for saba. It’s a more decadent version of the classic. Similarly, he jolts tuna with cabernet vinegar and incorporates potato, making for a fresher, heartier, more sophisticated sandwich. It’s all impressively executed and well-sourced, an ideal older-school sandwich shop for today’s age of eating.

In the beginning, the best grilled cheese sandwich in town was an off-menu item at tiny neighborhood eatery Ingo’s Tasty Food, available only to in-the-know regulars who were clued in to ask for it. Then, for a while, this sister restaurant of La Grande Orange made the sandwich a permanent part of the menu. Now, it’s back to being a secret, but it’s definitely worth asking for. Why should you get a Grown-Up’s Secret Grilled Cheese instead of one of Ingo’s award-winning burgers? Between two toasted slices of Noble bread are melted cheddar, gourmet For Epi cheese, and sweet Mad River Farm jam. It’s a unique combination that will make your next trek to this Arcadia restaurant sweet and savory.

Look closely at the menu the next time you’re offered bread service at a high-end restaurant in town. You’re likely to notice that the bread comes from Noble Bread — that is, unless the restaurant’s making it in-house. There’s a good reason Valley chefs and restaurant owners are so fond of the bakery’s product. Bakers Jason Raducha and Claudio Urciuoli use old-school techniques to produce consistently excellent loaves of bread. The Country Loaf is the bakery’s signature offering, and it’s great. But if you’re a real fan, then you also hunt down specialty creations like the sesame loaf, which Raducha bakes just once a week. With subtle nutty flavors and a slightly denser crumb, this bread tastes just as excellent alone as when smothered with Nutella or butter. This year, Noble began milling its own grain in-house (locally grown heritage varieties, of course), bringing it one step closer to the true traditions of Old World baking.
