Number 96: Machaca from Los Dos Molinos
My nostrils flare, my eyes start to water up, and my face gets a little hot just at the thought of Los Dos Molino’s fiery New Mexican cooking. It’s a rush — and it’s delicious.
Even to sit down to the basic chips and salsa here is enough to get me heated up, but it’s the machaca platter that really kicks me into high gear. This fat, beef-filled burro is served enchilada-style, slathered in sauce and melted cheese. The savory, gutsy flavor is rich enough for the extreme spice level, which is the kind that compels me to keep eating to quell the fire in my mouth. Mercifully, they don’t skimp on rice and beans, either.
