A new bourbon bar is opening in uptown Phoenix

The spirit-forward lounge will offer rare bottles, craft cocktails and more. Here's what to expect.

The team behind a long-running New American restaurant known for its bourbon collection will double down in uptown Phoenix.

Phoenix City Grille founder Sheldon Knapp and owner Dennis Shaw plan to open Still & Barrel next door to the nearly 30-year-old eatery, located at 16th Street and Bethany Home Road, on Thursday, Feb. 5. 

Knapp founded the bar and grill in 1997 in the Bethany East Shopping Center, on the southwest corner of 16th Street and Bethany Home Road. Shaw came in as an owner and operator in 2024.

The restaurant is known for its comforting dishes infused with local ingredients, including green chile skillet cornbread, a super food salad packed with tepary beans and Sonoran wheat berries, short ribs, seafood and house-made accouterments, including a black garlic steak sauce. The restaurant also proudly promotes its local partners on its menu, such as Noble Bread, Chula Seafood and Ramona Farms.

In addition to its all-day menu, Phoenix City Grille boasts an impressive bar with a dense, five-page menu dedicated to whiskeys from around the world. Now, Knapp and Shaw have partnered on a second spot where the spirit will get the spotlight.

“Still & Barrel is more than a bourbon bar — it is an experience,” Shaw said in a press release. 

The bar’s spirits collection includes American, Irish and Japanese whiskeys, Scotch and agave spirits, which will be available in individual pours or flights. Bartenders will also craft classic and specialty sips. Among those are the Still House Barrel Aged Old Fashioned and the Black Tie Manhattan, made with Jack Daniel’s Rye Private Barrel, Hendrick’s Gin, vermouth and green walnut and peach liqueurs.

“We want all our guests to feel like Still & Barrel is a place where they feel comfortable ordering a classic cocktail, a great glass of wine, an exceptional rare whiskey or one of the many Phoenix City Grille picks that we recommend,” Shaw said.

Still & Barrel visitors will also find a selection of wines and plates to nosh. They can get comfortable at the plush leather stools that wrap around the veined stone bar. For larger parties, four tables are set in the industrial, intimate space.

And, guests will be able to take some of their favorite sips from Still & Barrel home. Like Phoenix City Grille, customers will be able to shop a selection of bottles and wines for purchase.
