Cindy Gentry is a soft-spoken powerhouse in the Arizona world of food. She opened the Downtown Phoenix Public Market in February 2005 and is working on a Farm to Cafeteria program for Arizona. She loves Celtic music and got twin grandchildren just over a year ago. Lucky lady.
We asked Cindy to describe her perfect food day.
Breakfast: Fresh juice, eggs from the backyard chickens and ducks, scrambled with local cheese, topped with Mi Salsa’s salsa; fruit salad with nuts, honey and yogurt, energy drink
Lunch: a mix of salads from the Phoenix Public Market, especially including the spicy cole slaw, sweet potatoes and dates, and sautéed cauliflower, water
Dinner: Thai Sala’s Thai tea, and sharing any vegetarian curry and / or noodle dish they have with my sweetie
Between meal snacks: apples, chips and cheese, Downtown Public Market Cafe cook Mario’s protein shake made with hemp protein powder, macro greens, rice milk, banana, agave and kale
