​Yesterday we met Clint Manning, the mixologist who developed the expansive menu of margaritas at Canteen Modern Tequila Bar. Today he shares with us the recipe for one of his more unique creations, the Serrano-Mango Margarita.

“With margaritas, it’s sometimes tough to make sure they’re not too sweet,” Manning says. “I like this one because it still has balls. The tequila isn’t totally hidden.”

The recipe employs tequila that’s been infused with spicy Serrano peppers. To get it right, Manning had to fiddle with the pepper proportions and taste test several fiery tequilas.

“It was rough,” Manning says.

It all paid off in the end, however. The margarita’s sweet yet earthy, with an enticing kick of spice at the back of the throat.

The ingredients:
2 oz. Serrano-infused blanco tequila (Slice 10 Serranos, per liter of tequila and let sit for three days.)
½ oz. orange liqueur
1 oz. mango puree
½ oz. fresh lime juice
½ oz. simple syrup

How to make it:
Mix ingredients in an ice-filled shaker. Shake well. Pour into a large margarita glass and garnish, if desired.
