Insalata di polpo
It’s pretty, isn’t it? Even you haters have to admit that photo kinda makes you wanna stop hatin’ on the poor cephalopod mullusc, aka octopus. That beautiful salad is made up of tender marinated bits of tentacled meat tossed with pea sprouts and julienned carrots. Wanna give it a shot? Click here for the recipe. Quick tip – if you want really tender octopus (which you do), double (or triple) bag the octopus then give it a whirl in your washing machine on the spin cycle. It will replicate the old European tenderizing tradition of beating the octopus against sea rocks.
Will you step up to support New Times this year?
At New Times, we’re small and scrappy — and we make the most of every dollar from our supporters. Right now, we’re $15,500 away from reaching our December 31 goal of $30,000. If you’ve ever learned something new, stayed informed, or felt more connected because of New Times, now’s the time to give back.
