Looks like Michael Rusconi, the executive chef of Lon’s at the Hermosa from 2005 to 2009, and whose success at combining European technique with native ingredients and local produce garnered the restaurant a AAA Four Diamond award, has resurfaced to start a place of his own.
The Republic reports that Rusconi has signed a lease at the northeast corner of Tatum Road and Shea Boulevard (in the former location of the Japanese eatery, Shiro) to open his new restaurant, called Rusconi’s Kitchen, in September.
Offering what Rusconi calls, “regional American comfort food,” the Republic goes on to say that many of the creations at Rusconi’s Kitchen will be cooked up on a wood-burning grill and that the menu may include such dishes as poblano-glazed pork belly with grits, homemade pasta, and pork osso buco.
