Union at the Biltmore Fashion Park will be welcoming a new dining option next month when Forge Wood-Fired Pizza opens its doors. The restaurant comes courtesy of the Le Bon Temps Restaurants team, consisting of of Michael Karp, Bob Burke, and Andy Byrnes.

This will be the third Forge Wood-Fired Pizza location, with the original restaurant located on the waterfront of Jack London Square in Oakland, Calif. The Biltmore restaurant will be both a pizzeria and pub though the focus will be the signature wood-fired Neapolitan-style pizzas.

Forge Wood-Fired Pizza will open to the public on Tuesday, October 7.

The restaurant will serve lunch and dinner seven days a week with a menu that includes dishes such as Crispy Cheese Curds, Long Cooked Ribs, and a Fried Chicken sandwich with citrus greens and Calabrian aioli. Pizza options will include the Fat Boy Pizza made with sausage, bacon, pickled peppers, and cream and the Three Cheese Pizza with mozzarella, seasoned ricotta, roasted garlic, and topped with arugula, lemon and Parmesan cheese.

The kitchen will be under the charge of executive chef Jeffrey Amber, formerly of XYZ, Chow, and Moose’s all in San Francisco.

As for drinks, Forge will pour local craft beers including eight on draft through a custom cast-iron tap system. There will also be American and European wines and a craft cocktail program using ingredients such as house-made ginger beer.

The 1,500 sq.-ft. restaurant will be housed inside a custom-designed space complete with a large bar, imported Valoriani wood-burning oven, and a shaded patio with two fire pits. Design elements will include black hot rolled steel, rough-sawn ‘burnt’ wood, and a 6-inch steel gas pipe beer tap system.
