A Februrary 23 inspection of the restaurant at the San Carlos Hotel in downtown Phoenix revealed, among other things, “white sauce containing cooked chicken and vegetables…date marked 2/11/09.”
The manager discarded the mystery sauce. Good. We figure most things that are white have a much shorter shelf life.
Speaking of aging white foodstuffs….
The inspector noted that “goats cheese, sour cream, yogurt, cream cheese” and “various soups” were held for longer than 24 hours without being date marked.
This time, the manager date marked all foods. Which begs the question — without prior dates, how did he/she know?
Um, yeah, gross.
Also in the report: news of moldy canteloupe, holes in the wall, and peppers that were not cooled using acceptable methods.
