Since we caught wind of that a Hawaiian food truck would be rolling in to town, you could say we’ve been excited. But that would be putting it lightly.

Mobile ethnic cuisine from the land of paradise is the kind of thing food trucks were invented for and thanks to island local boy Jeff Chang, the Valley will be getting a little more Hawaiian spice in the mix. Good news is you don’t have to wait long, Chang and his Island Loco food truck expect to debut next week.

When creating his menu Chang says he aimed to balance the palette of his Southwest audience against the value of staying true to authentic Hawaiian cuisine. What he ended up with is a simply designed menu featuring four menu items and three meat bases: kalua pig, teriyaki chicken and teriyaki (or kalbi-style) beef.

The most traditional of the three bases – and of all the items on the menu so far – is the kalua pig, or slow roasted shredded pork with a smoky and salty flavor. While traditionally cooked over several hours in an underground oven called an imu, Chang says he prepares his meat a slow cooker.

The menu options include fusion tacos, plate lunch, sliders or an island wrap and will be priced between $6 and $10.

Island Loco plans to make its first appearance on Friday October 5 at JAM Foodie Fridays in Scottsdale from 6 to 8 p.m. For more information about their upcoming events visit the Island Loco Facebook or website.
