79: Pappardelle Bolognese from Amaro Pizzeria
Cave Creek may be a bit off the beaten path for Italian food, but with pasta this fresh we can’t help but make the trek. Amaro is a chic, urban eatery that doubles as a swanky lounge with free-flowing vino, and it certainly fills an artisanal pizzeria void in North Phoenix. While the Kantak Chop salad and the Dolce Arrabiata pizza are tempting, it’s the Pappardelle Bolognese that has us coming back for seconds.
The Pappardelle Bolognese was a perfectly cooked mass of long, al dente noodles tossed with some serious flavor. A red wine meat sauce clung to the thick-cut ribbons of pasta, bathing the dish in hearty bolognese. The only way to possibly improve upon it? Fresh shaven parmesan and a glass of vino on the side.
