There’s more construction underway at Biltmore Fashion Park, as the space next to Zinburger will soon become a new spot called Rojo Mexican Grill.
Set to open by the end of this year, it’s a Mexican restaurant founded by restaurateurs Michael McDermott and Jason Merritt, who were partners in founding Kona Grill.
McDermott, who developed the concept, was inspired by his extensive travels in Mexico, as well as the recipe archives of his father, Marno McDermott, who was co-founder of the Chi-Chi’s restaurant chain.
The first location of Rojo, in Minneapolis, opened in August, serving traditional dishes such as grilled corn with cotija, carnitas tacos, enchiladas, and fish Veracruz, as well as some Mexican-inspired dishes like a Rojo Burger, and a beef, sausage, and chorizo meatloaf topped with Oaxaca cream sauce.
