From now through Caramelpalooza — March 2 at Smeeks candy shop — Chow Bella will introduce you to the 17 chefs participating in the third annual caramel tasting. Today, meet Tina Chau of Slickables Ice Cream Sandwich.

Slickables has only been around for a few months but this Tempe business has a simple, unbeatable business model: Sell ice cream sandwiches, near a college campus, in a state that often sees the heat at well over 110 degrees. It doesn’t hurt that two cookies and a massive scoop of ice cream will only set you back $2.

What is one thing everyone should know how to cook and why?
T: I think everyone should learn how to bake a lasagna because you can always freeze it and eat it months later.

What is the strangest part of living in Phoenix?
T: You know, I haven’t lived here in Phoenix for very long and I moved here from California to start this shop. I haven’t seen a whole lot of Phoenix … I actually love the heat. I’ve been here during the summer time and I know what it’s like.

What are you obsessed with?
T: This is going to be lame but I’m obsessed with watching the Food Network … My favorite show is Chopped. I think it’s fascinating how, within the time constraints they are given, that they can whip up such creative dishes.

What is your favorite cookie?
T: My favorite cookie is my lemon white-chocolate chip cookie. It’s got this sweet lemon taste to it. I tell my customers, “It’s not tart like a lemon bar.” … They’re hesitant at first but they try it and they like it.

What is the last book you read?
T:The last book of The Hunger Games and I loved it.

Find Tina and 17 other chefs at Caramelpalooza, Friday, March 2, from 7 til the caramel runs out, Smeeks candy store, northwest corner of Central and Camelback.
