Originality and tuna sandwiches don’t always go together, but that hasn’t stopped me from keeping an eye out for new takes on a lunchtime favorite.
Zinc Bistro does an interesting and tasty version, piling up smoked tuna salad on crisp toasts. Capers and dill keep the smokiness in check, and a dollop of sweet peppers adds some zing. Hard-boiled quail eggs are a bonus.
I tried the mini open-faced sandwiches on a recent visit to the Kierland Commons French spot, where I met a friend for a leisurely martini. We also split a grilled chicken sandwich with pesto, gooey brie, and mushrooms. (Oops! Somebody took a bite before I snapped the picture.)
Our bartender made a good one.
