Squid Ink Sushi, the Peoria restaurant from chef-owner Schuyler Estes, is planning on bringing its sushi — as well as its contemporary Asian fusion dishes — to CityScape. And (bonus), it’s staying up late.
The Republic reports Squid Ink Sushi will open at CityScape this summer (under Blue Hound Kitchen & Cocktails) and feature a take-out walk-up window that will stay open late, all week long.
For the most part, the menu will be the same as the Peoria location’s (think sushi, as well as dishes like shishito peppers, chicken teriyaki, and spicy vegetables with udon noodles) but, the Republic reports, it will include ramen and what chef-owner Estes calls “Asian tapas.”
