There’s already been a lot of buzz surrounding The Colony, a soon-to-be-completed mixed-use development located on the northwest corner of Seventh Street and Missouri Avenue in midtown Phoenix.
Earlier this month, we told you about plans for a restaurant and speakeasy-style bar that will occupy two spaces within the converted office building. Now, we can give you the opening date for another of The Colony’s tenants.
The third metro Phoenix location of The Herb Box will open at The Colony on Friday, April 8 at 8 a.m. The restaurant, which will be the first business to open within the development, will offer breakfast, lunch, and dinner.
The Herb Box has two other locations in Scottsdale, one at Southbridge in Old Town and a second at DC Ranch in North Scottsdale. Both restaurants serve menus of “innovative world cuisine,” according to the restaurant website.
Other restaurants set to open at The Colony include Stock & Stable, a new concept from Clever Koi chef and co-owner Jared Porter and former Clever Koi chef and co-owner Joe Absolor. The restaurant will also feature a second-story lounge called Honor Amongst Thieves, which will be headed up by Stephanie Tesler, a Valley mixologist best known for her time at BlueHound Kitchen at the Hotel Palomar.
The Colony will also feature the first Phoenix location of Pure Sushi, a Scottsdale-based sushi restaurant.
