Chances are good that if you’ve eaten at True Food Kitchen, you’ve heard of Dr. Andrew Weil. But in case you’re not familiar with the name, here’s a little background: Weil, who earned his medical doctorate at Harvard, is known as one of the biggest proponents of integrated medicine and holistic health. He’s the author of nearly a dozen books, serves as the Director of Integrative Health at Miraval Life in Balance Resort, and lives right here in Arizona. 

He was also instrumental in helping restaurateur Sam Fox come up with the concept for True Food Kitchen. The restaurant’s menu of health-focused fare adheres closely to Weil’s anti-inflammatory diet, and next week you can dine with the doctor at the Biltmore location of the restaurant. 

The dinner, which will be held on Wednesday, May 4 from 6 to 8 p.m., will include a four-course meal and dessert, as well as beverage pairings selected by True Food Kitchen’s beverage manager, Jon Augustin. You can view the complete menu below:

First Course Brandywine Tomato Bruschetta – almond ricotta, black garlic, garden herbs Wine pairing – Torres Ibericos Crianza
Second Course King Oyster Mushroom “Crudo” – yuzu kosho, white shoyu, avocado, thai basil  Beverage pairing – Yoshinogawa Junmai Ginjo Sake 
Third Course Grilled Broccolini – smoked walnut pesto, soft egg, crispy shallot  Wine pairing – Pazo Barrontes Albariño 
Fourth Course Mount Lassen Trout – baby artichoke, English pea, chili flake, mint  Beverage pairing – Broadbent Vinho Verde 
Dessert Heirloom Carrot Gateau – silken tofu, raisin, cashew, brown rice sorbet  Beverage pairing – Spiced Guayusa Tea
The dinner costs $80 per person, and space is limited. Reservations can be made by calling True Food Kitchen at Biltmore Fashion Park at 602-774-3488
