Sure, Indian food is healthful, low-fat and chock-full of vegetables, but Maharaja Palace proves it can rival the flavors of the richest foods. The chef here knows his spices, applying them in lavish gusts to bring out the best of fresh ingredients. Mulligatawny soup is among the best in town, as are karahi dishes, served on sizzling plates. Karahi tandoori chicken positively glows, blending the bird with fresh spinach and complexly spiced gravy. Naan is fabulous, bar none.
