When the restaurant gods shutter a Monk, they open a Bootlegger.
At least that's the case with Praying Monk, restaurateur and chef Aaron May's stylish American beer cafe in Old Town Scottsdale opened in May of last year. Shuttered last night, Praying Monk, located at 7217 East First Street, will become the second location of Bootleggers, the barbecue pit gone gastropub in North Phoenix.
Here's what diners can expect.
From Rick Phillips, co-writer of the food blog EaterAZ and the man behind the Arizona Taco and Arizona BBQ festivals, competition-circuit pit-master Kevin Slade, and chef Matt Carter (The Mission, Zinc Bistro, The House Brasserie), Bootleggers first opened in May of this year. Securing a second Bootleggers location so shortly was something Phillips tells me he wasn't expecting to do, but when friend Aaron May called, there was a lot of interest.
"It's got the wood, the steel -- it already looks like a Bootleggers," Phillips says. "That's what made this deal too good to pass up."

Given the minimal remodeling and decorating involved, Phillips goes on to say the new Bootleggers should be open in the next four to six weeks. As for the eats, Phillips says Carter and Bootleggers chef James Fox will sit down to review the menu, with any additions or deletions affecting both restaurants.
"The idea has always been that Bootleggers would be a kind of blueprint that we could replicate," Phillips tells me. "I just didn't expect it to be this quickly."
