Buck & Rider team crafts new restaurant concept for Old Town Scottsdale

The new eatery, named Pinyon after the trees that grow in the Mediterranean and Southwest, is scheduled to open this fall.

The team behind the popular seafood restaurant Buck & Rider is bringing a new eatery to Scottsdale this fall.

Pinyon is a Mediterranean-inspired restaurant that draws on coastal cuisine spanning from Spain to Malta. Diners can expect a selection of spreads and dips paired with housemade pitas plus crudos, seasonal salads and pasta, according to a press release announcing the upcoming restaurant.

Pinyon is slated to open on Brown Avenue near First Street in a building that sits along the lawn of Scottsdale Civic Center in Old Town. This is the third concept from Hi Noon Hospitality, which also runs Buck & Rider’s three locations in Phoenix, Scottsdale and Gilbert, and Ingo’s Tasty Food, which has three outposts in Phoenix and Scottsdale.

This latest restaurant was inspired by Hi Noon founder Adam Strecker’s travels across the Mediterranean coast. The eatery is named in honor of the pine nut trees that are found in the Mediterranean and the American Southwest.

“At Pinyon, our goal is to provide more than just a meal,” Strecker said in the release. “We aim to offer our guests an authentic Mediterranean experience – one that highlights the region's rich culinary traditions while fostering a sense of community, one plate at a time.”
