A guide to dining at the new The REMI hotel in Scottsdale

Five restaurants and bars have opened inside the new Autograph Collection Hotel. Here's where to eat and drink.

The REMI, an Autograph Collection Hotel, debuted in late July in the heart of Old Town Scottsdale. The 12-story property features 161 guest rooms, desert-inspired design and the city’s largest rooftop pool. But for locals and visitors alike, the real buzz is about the lineup of new restaurants calling The REMI home.

“These outlets are destination-worthy locations with their own pulse,” Beth Brainard, general manager of The REMI, said in a news release. “We created experiences that feel spontaneous but intentional, luxurious but playful. This is dining that captures the spirit of Scottsdale in a fresh way.”

Located just off Camelback and Scottsdale roads, the boutique hotel blends contemporary style with warm Southwestern touches. Inside, five distinct culinary concepts from Alliance Hospitality Group, the team behind Sexy Roman in Scottsdale and the Bitlmore area's Flint by Baltaire, with support from Riot Hospitality Group, offer everything from Japanese-Western fusion to nostalgic American comfort food. Here's what to expect at The REMI's new restaurants.

Kauboi

Open exclusively for dinner, Kauboi offers a fine-dining Japanese steakhouse experience. The space pairs stone and leather interiors with the drama of a custom-built, dual-format robata and grill suite — one side devoted to traditional yakitori (skewered chicken cooked over charcoal), the other to Santa Maria-style steaks, which are traditionally dry rubbed with spices and cooked over an open flame.

Begin with oysters or a bright, spicy cucumber salad before sharing togarashi-dusted fries or crispy pork belly. From the skewers list, customers can choose Wagyu short rib, New York Strip, chicken thigh, tsukune or chicken meatballs, pork belly, head-on blue prawns, whole lobster tail or Hokkaido scallop. Robata vegetables make a colorful side, as does the richly flavored Wagyu fried rice served in a clay pot.

For a showpiece entree, the Kauboi Cut, a 40-ounce Mishima tomahawk ribeye, is fired and served tableside, accompanied by topping options like steak sauce, red yuzu Kosho butter or Kazami chimichurri.

Kauboi Terrace

Just beyond Kauboi, the terrace area offers a large open-air patio. Here, customers can settle into lounge seating, gather around a two-sided fireplace or sip cocktails at a private cabana. With its prominent greenery and relaxed, speakeasy-style atmosphere, it’s a hidden oasis above the city with overlapping food options from the restaurant available.

F/Sixteen

Drawing inspiration from 1950s diners and the iconic F-16 fighter jet, F/Sixteen has a playful blend of retro charm and modern flair. It's open daily from 6 a.m. to 4 p.m., and breakfast features omelets, sandwiches, pancakes and coffee drinks. The Afterburner Sando is made up of hatch chile sausage, pulled pork, fried egg, pepper jack cheese and finished with a jalapeno aioli.

From 11 a.m., the menu shifts to hearty lunches with appetizers, soups, salads and indulgent mains like Baby Back Ribs glazed in Dr. Pepper barbecue sauce with slaw, mashed potatoes and pickles. The Charred Jalapeño Smash Burger layers a Wagyu blend patty with roasted jalapeños and pepper jack cheese, served alongside fries, onion rings or a side salad.

Desserts nod to Americana classics and include apple pie and a banana split with bourbon caramel or peanut butter sauce. Boozy milkshakes like the Almond Root Beer Float, made with Amaretto, root beer, vanilla ice cream and whipped cream, add a grown-up element to nostalgic treats.

Allegra Pool Bar

High above the city, Allegra offers a rooftop vantage point for daytime lounging or evening hangouts. Its open daily from 10 a.m. to 6 p.m. and available to the public. The menu highlights light, shareable dishes such as mezze, ceviche, salads and wraps. Seasonal fruit is sprinkled with house-made Tajin, mint and local honey, and bluefin tuna tartare couples fresh fish with harissa vinaigrette, pickled shallots, cucumber and lavash. For a sweet treat, try the Kauboi chocolate chip cookies from the restaurant downstairs, baked with brown butter, beef tallow and Mexican hot chocolate.

The bar extends service Thursday through Saturday, pairing cocktails, wine and beer with live DJ sets. Signature drinks include the tropical Sunkissed Siren with coconut cream and cucumber and the crisp One Piece, served in a custom-branded Thai coconut. For something portable, The Guest List allows customers to choose tequila or vodka, mix in fresh herbs and berries and take it poolside in a sealed can.

The Remi Lobby Bar

At street level, this space is ideal for people-watching, happy hour or a nightcap. The bar pours handcrafted cocktails daily starting at 4 p.m. Customers can also enjoy exclusive access to Maya Day + Night directly through a private entrance from the hotel's Lobby Bar.
