Proof Bread to celebrate downtown Phoenix grand opening this weekend

The Valley bakery and farmers market staple brings its breads, pastries and pizza to Roosevelt Row. Here's a peek inside.

The wait for a local sourdough bakeshop downtown is over. Proof Bread opened its new storefront on May 16 in the ECO PHX apartment building.

The sourdough bakery will host a grand opening event from 7 a.m. to 4 p.m. on Saturday with free croissants for the first 50 people. The bakery, located at Roosevelt Street and Third Avenue, will also offer a raffle for a $100 gift card and share coupons for future visits. There will be DJ sets curated by downtown neighbor Central Records and local vendors joining the party, including Cultivated's flowers.

“We are so honored and excited to be part of this neighborhood,” a post announcing the event said.

Proof Bread was founded in 2014 by Jared Allen. Jon Przybyl and his wife, Amanda Abou-Eid, were loyal customers who bought the business in 2017, initially baking out of their garage. The couple opened their first brick-and-mortar space in downtown Mesa in 2021. In the years since, they have opened locations in North Phoenix and Litchfield Park.

Since making its debut, the bakery has been a staple at Valley farmers markets, with customers queuing up to snag breakfast pastries and crusty loaves. Currently, Proof is at four farmers markets in Phoenix, Gilbert and Scottsdale.

The new downtown location features a walk-up counter to order coffee and baked goods from outside, as well as a pastry case and service inside. The 600-square-foot space includes indoor seating with a kids’ play area and a shelf geared toward adults with vinyl, books and games.

The downtown Phoenix shop is Proof’s first storefront without an on-site bakery. With a smaller footprint, the owners say they are focused on creating a place for people to hang out. Breads and pastries for this location are baked in Mesa. Downtown, guests will find Proof's naturally leavened loaves, laminated pastries and Roman-style square slices of pizza as well as a larger menu of coffee and espresso drinks.

When we stopped by to check out the new space on Tuesday, the owners were meeting with their team and balancing calls for their upcoming bakery in Gilbert.

The opening is the start of a round of expansion by the homegrown bakery. In addition to this downtown Phoenix location, Proof's Gilbert bakery is slated to open in January 2026.
