On the heels of yesterday's news that James Beard Award finalist Kevin Binkley, chef and owner of Binkley's Restaurant and Café Bink, is opening a new restaurant in the spot currently occupied by Sophie's Bistro, comes the news that Sophie's will be closing its doors after dinner service this Saturday.

The charming little eatery, in a former 1940s home at 2320 East Osborn Street in Central Phoenix, started in 2000 courtesy of owner and former Parisian Serge Boukatch, who named the restaurant after his daughter.
Boukatch kept the quaint Sophie's Bistro focused on French classics such as escargot, quiche, lobster bisque, crepes, and crème brûleé.
The Republic reports Binkley had kept an eye on Sophie's Bistro as a possible new restaurant location since he had learned Boukatch was planning to move to Colorado.
