Chef-owner Joshua Hebert was hoping that Santa would bring him a new restaurant, but instead, he got a New Year’s “baby”; Posh quietly opened on New Year’s Eve.

Located inside the gorgeous Optima Camelview Village, the restaurant serves “improvisational cuisine,” which Hebert describes as a “very seasonally adaptive” take on modern American.

Hebert built a loyal following in the East Valley at Dual, where he was the executive chef. The Gilbert eatery closed in March 2007.

Posh’s menu is similar to that of a sushi bar, with boxes to check your preferences, cravings, and aversions. Served tasting-menu-style, every course is customized. Check how many courses you want and what ingredients you like, and Hebert will oblige. It’s $45 for four courses, $55 for five, $65 for six, $75 for seven, and $105 for the Posh version of omakase. Wine pairings are available as well.

Since the menu’s so fluid, I asked Hebert to tell me about some of his recent creations. Consider this:

Amuse bouche of watermelon noodles with arugula broth and watercress; white asparagus two ways, with poached asparagus with bruleed miso aioli, and white asparagus soup with osetra caviar; warm duck confit salad with watercress, egg yolk, and pickled red onions; pan-seared branzino with cauliflower puree and basil pesto; and imported Kobe beef with pickled plum dashi and fresh ginger, scallion, and pickled plum.

(Can you tell Hebert’s a closet Japanophile? He spent a year in Japan working as a chef at Tokyo’s prestigious Miyako Hotel.)

The restaurant seats 75, but the place to be is at the 30-seat counter, where you can watch Hebert do his thing in the open kitchen.
