We dipped into the archives of Grandma Hernandez’s collection of recipes again for this week’s entry — a quick and dirty cookie recipe made from store bought cake mix.

You have to wonder who first took a box of prefab cake mix and got the bright idea to try to make cookies out of it. Nonetheless, we’re glad they did because these funny-looking globs are chewy and a snap to make.


CAKE MIX COOKIES

“To one package of any cake mix, add two eggs, 1/2 C oil. You can
also add nuts, chocolate chips, coconut, cherries, raisins,
butterscotch chips, etc.

Drop by spoonfuls on a baking sheet and bake in a 350 degree oven for about 12 minutes, or until a cookie tests done to a toothpick.”

That’s simple enough, right? Think carefully about what kind of oil you’ll use and avoid something overly flavorful like olive oil. On the other hand, if you’re going to be adding coconut flakes to your cookies, then you may want to use coconut oil.

We happened to have a box of strawberry cake mix in the pantry that had been sitting around for months on end. We pour the mix into a bowl and added the eggs and vegetable oil. Not two minutes later we spooned it onto the baking sheet.

So the minuses of these cookies are that they are oddly shaped and not the prettiest in the world. The pluses are that they’re soft and bright pink. They have that wonderful plastic Strawberry Shortcake smell and they taste like the marshmallows from Lucky Charms.
