In a cavernous room where the sound seems to vanish overhead, blond wood accents a sea of white and daylight pours in through floor-to-ceiling windows. They reveal the edifices of Arizona State University’s SkySong campus, curling around Fellow’s posh patio, and the strip of garden where begonias grow. Italy couldn’t feel more remote. Fellow’s best dishes channel an Italian ethos: great ingredients, minimal technique to ease out the best of those ingredients in combination with one another, finito.
