Chef Claudio Urciuoli is back in the kitchen. He and baker Jason Raducha are crafting simple Italian fare of exceptional quality at this new restaurant, where soup, small plates, and sandwiches are the order of the day. Dishes change every few days, and are what Urciuoli calls his take on the idea of Spanish tapas. They’ve recently included a colorful dish of grapefruit, marinated celery, and Castelvertrano olives, a neat combination of salt, sugar, and fat that makes for a beautiful balance of flavors. A simple salad featuring mizuna greens, a mild Asian mustard green, and crisp crimson apples and radicchio is dressed with oil and a touch of salt. The smorgas, an open-face sandwich, often features seafood over a creamy layer of canellini beans with just a touch of paprika on Noble's nine grain bread. Delicious, light desserts include a slice of toasted Noble country loaf dressed in extra virgin olive oil and hazelnut and Sicilian pistachio nut spread.
