Add Pizzeria Virtu to the Valley’s long list of solid Neapolitan-style pizza options. Gio Osso, best known for his creative Italian cooking at Virtu Honest Craft, brings a chef-driven touch to the famously minimalistic pizza style at this new downtown Scottsdale pizzeria. His touches are small but strong. Pesto and the right cheese combination. Two separate but complementary kinds of heat on a soppressata pie. Osso peals from a wood oven and has New Jersey pizzeria roots, Neapolitan-style training. The cocktail program here is anchored by Italian amari and unlikely combinations. Even if you have pizza fatigue, Osso works creatively within Neapolitan’s tight parameters, making Pizzeria Virtu worth a visit.
