But now, just seven months later, the downtown Phoenix restaurant is set to close. The owners posted an announcement to their social media on Tuesday.
"With a gracious and thankful heart, we have some news to share with you. We have decided that it is in our best interest to close Full Speed Chicken and Ribs," the post says.
While many people learned how to make sourdough during the pandemic, Scott Holmes turned his attention to fried chicken. He worked to perfect the recipe before launching the new concept downtown. There, the restaurant sold chicken sandwiches and biscuits along with Little Miss' famous ribs and other barbecue specialties.

The chicken thighs plate served with mac & cheese and pork & beans sides at Full Speed Chicken & Ribs.

"The ability to open a restaurant is an incredible thing. The vision turns into a reality with a team of people that believe and take pride in what they do and how they treat people," the post explains. "We made some great fried chicken and barbecue, yet it never seemed to catch fire. We gained an incredible amount of wisdom, created some great memories and relationships with amazing people."
The restaurant's last day will be Saturday, Nov. 30. And the closure will come on the heels of a busy week. For barbecue restaurants, Thanksgiving is one of the busiest times of the year, and Full Speed offered smoked turkey and sides for the holiday. Now, those picking up their Thanksgiving meals on Thursday will be some of the restaurant's last customers.
"We look forward to many future successes and some failures with all of you as we keep moving forward at Little Miss BBQ. Thank you for your support as we go through this journey," the announcement signed off. "Have a great Thanksgiving!"
