Entrée: Corn Cakes with Pulled Pork

​We then made our corn cakes. We used a box of Jiffy cornbread mix as our base, and followed the instructions on the side for pancakes. We also added 1-2 tablespoons each of chopped poblano pepper, black beans, and roasted corn to the mix.

Once our cakes were on the plate, we topped them with pork, and then garnished with cilantro, black beans, roasted corn, chopped green onions, pickled red onions, and served alongside a roasted jalapeño (we picked these items up from Pollo Supremo), some Tabasco Chipotle, and served with a shot of whiskey.


Whiskey Scented Kettle Corn with Candied Jalapeños

Add the following to a large pan with lid: 1/4 cup of oil, 1 teaspoon each of whiskey and sugar. Place 1/2 cup popcorn kernels in the pan with lid, and pop until done shaking the pan to prevent burning. Top with the candied jalapeños.
