The chef celebrates the flavorful bounty of baby vegetables, lighter meat dishes, and abundant fish from the Pacific Northwest. Mussels in a thyme-tinged Chardonnay broth, spit-roasted chicken paired with Swiss chard and chive whipped potatoes, and John Dory with baby beets, fennel and white-truffle celery jus are highlights.
