Greens get points from nutritionists as a "superfood" for their antioxidant properties, and for being high in minerals like calcium and magnesium.

Here's a recipe for vegetarian stewed greens, right off the back of the Southern Greens bag, that would be great alongside cornbread -- available pre-made or in a mix at TJ's, as well.

Simple Greens
1 lb. Trader Joe's Southern Greens blend
1 clove garlic minced
1 onion , chopped
½ c. chopped green onion
1 c. vegetable broth
1 c. tomato juice
Salt, pepper, marjoram to taste
Parmesan cheese
Sauté garlic and onion in a pot large enough to hold greens. Add vegetable broth and tomato juice and bring to a boil. Add greens and seasonings and cook over low heat for 35 min. or until tender. Sprinkle with Parmesan cheese if desired.
