2. Shrimp Quesadilla from Barrio Cafe
Anyone who has been to Barrio Cafe wouldn't be surprised to know that the restaurant's chef and owner, Silvana Salcido Esparza, was a James Beard semifinalist this year for best chef in the southwest. Anyone who hasn't been to Barrio Cafe, pretty much doesn't even live in Phoenix.
Although chef Silvana didn't make it to the finals round, we think her quesadilla deserves in award all on its own. Don't mistake the dish for a large griddled flour tortilla filled with a Mexican cheese blend. This is likely the most luxe quesadilla you'll ever order.
Four small tortillas come smothered in creamy melted cabra and Oaxaca cheeses. The pièce de résistance? A large grilled shrimp tops each quesadilla with a blanco tequila margarita reduction. While we were big fans of this dish when it was a lobster quesadilla, the shrimp version is great too.
