23. Josh Hebert of Posh Improvisational Cuisine
Chef Josh Hebert offers one of the Valley's most unique dining experiences at his Scottsdale restaurant, Posh Improvisational Cuisine. Since opening on New Year's Eve 2008, the restaurant has become a must-try destination for food lovers looking to test the boundaries of their palates. At the fine dining restaurant, Hebert and his team craft creative and whimsical multi-course menus tailored to each diner's preferences.
And in case you're hesitant to leave your meal in the hands of the chef, know that Hebert, who was raised in Arizona, brings plenty of experience to the concept. He developed a love for food a young age, and in high school, took to cooking at home as a way of impressing women. The hobby eventually developed into a passion and by his junior year, he was already cooking professionally.
After high school, he landed at Tarbell's restaurant, where he would stay for the next five years working as a line cook and sous chef. Next, he moved to San Francisco to log time at the world famous Zuni Cafe and Cafe Kati, until the restaurant's owner sent him to Japan to open Café California, a Tokyo offshoot of Café Kati in the Miyako Hotel. When he returned to the States, he took a job as executive chef at Tarbell's and later went on to serve as executive chef of North at Kierland Commons before opening Posh.
Hebert lives in Scottsdale with his wife and his two herding dogs. When he's not at the restaurant, he can be found on the golf course, playing with his dogs, or substitute teaching at the East Valley Institute of Technology culinary program.

The worst culinary trend I've seen recently is people shunning traditional dining in lieu of happy hour everywhere. Please enjoy a nice dinner with your friends, and leave the smart phone for later. Re-engage with PEOPLE!
The most memorable meal I've had recently was Blanca in Brooklyn. [It] was a step above anything I have had in while, about 19 courses in two and a half hours. It was killer.
