From now until we publish the 2016 edition of Best of Phoenix, New Times is naming 100 Tastemakers — members of our local culinary community who help shape the way we eat, drink, and think about food in Phoenix. Some you’ll know, and for others, it’ll be a first introduction, but each person on our list deserves a nod for helping make our city so delicious.      20. Eddie Hantas of Hummus Xpress
    In a past life, Eddie Hantas played basketball for Lebanon’s national team, but today he’s the chef and culinary creator and Hummus Xpress in Tempe. At the small restaurant, Hantas and his team serve healthy, fast food in the form of build-your-own pitas, bowls, and plates that can be loaded up with gyro, falafel, marinated vegetables, tzatziki, tabouleh, and hummus. He opened the restaurant about three years ago, a year or so after the closure of his first restaurant, a pizza and hookah joint called Eddie’s Bistro. 
Today, Hantas dishes on his favorite spot for a bike ride and best place for a burrito in Phoenix.
My go-to place for a tasty burrito in Phoenix is Carolina’s. 
     
     The best-kept secret in Phoenix is Little India for South Indian food and the green belt for a walk, bike ride, or a jog. The Lost Leaf is my go-to when I’m in the mood for an intimate  jazz session. It’s an old house on Roosevelt and Fifth Street, and Baiz Market for all kinds of sweets and ethnic goods and produce like fresh dates, fresh pistachio that are still in the shell, and many others. Their meat shawarma is $5 and it’s to die for.
     
     Phoenix could use more Japanese ramen houses and less fast food. 
If I could have dinner with any five people, I’d chose Donald Trump, Sheriff Joe Arpiao, Robby Naiche, Michael Phelps, and Usain Bolt.
If I opened a second restaurant tomorrow, it’d be called Dalida and it would serve a collection of my favorite meals.
