We love an old-timey Mexican restaurant, tucked into a residential neighborhood-an old-fashioned, unpretentious place that's more about good frijoles than it is about "concept." We love us some real, tummy-filling Mexican grub-tacos, burros, enchiladas, rellenos, and tamales made like our mom would have made them if she'd had the decency to be from Guadalajara. And so we crave Fajardo's man-sized, crunchy beef chimichanga, piled with tasty guacamole, green onion, tomato, and shredded lettuce. We know fans of Fajardo's Oven-Roasted Pork Chop, a Sunday special that's topped with strips of green chile and served with a warm flour tortilla and scrambled eggs. Now, that's eating.
