It's no wonder it's one of the house favorites--the combination of cucumber and pineapple with a twist of lemon sure seems like a recipe for relaxation. This cocktail is definitely an escape from the everyday.

The recipe: ½ Cucumber, sliced Pineapple chunks 2 oz Finlandia vodka 1 oz Cointreau Juice of half a lemon

How to make it: Muddle the cucumber and pineapple in a cocktail shaker. Add vodka, Cointreau and lemon juice, and shake and strain into a chilled martini glass. Garnish with a cucumber slice.
