“Through my travels, I’ve learned every country takes pride in its natural wonders,” says Deepika Bhalla, founder of Wander. “Each culture is an artisan in how they tell their stories through the two languages we all speak: food and drink. I wanted to bring that inspirational feeling of wonder to Phoenix.”
Open since May, the inspiration for Wander came during the COVID-19 pandemic when events ground to a screeching halt. The owners of Chateau Luxe wanted to find a way to open the space to the public, who often didn’t know about the beautiful location until they attended a wedding there. The idea of repurposing a ballroom with a side entry seemed perfect for a craft cocktail lounge.
Upon entering, guests are immersed in a moody, mysterious space featuring velvet seating, gold accents and ambient lighting for an elegant night out. Vibrant arches adorn the room and a dazzling chandelier is the focal point amidst high ceilings. In honor of the Great Gatsby vibe, smart business attire is encouraged.
Wander’s cocktail alchemists have captured the essence of the world’s most significant places through experiential tipples created in-house. The Machu Picchu cocktail is made with purple corn, pineapple rinds, key lime Greek yogurt, pisco, cinnamon and velvet falernum served in an adorable llama vessel. Or travel to Japan with the Kyoto cocktail mixed with infusions of cucumber, coconut oil, toasted sushi rice, cardamom and cachaca served in a traditional vase-like jar.
The complex flavor profiles within each signature cocktail require special components that can take days to create. Because of this process, the bases are made in large batches behind the scenes, allowing for more creativity and ease of service. There is also a full bar and wine list.
“We’ve put a lot of thought in creating our signature cocktails around different regions and cultures,” says general manager Austin Cahill.
A rotating menu of small bites including flatbreads and salads inspired by the flavors of Arizona is also available. Wander is currently open only on Friday and Saturday nights from 6 p.m. to midnight and reservations are recommended. Enjoy live music both nights starting at 8 p.m.
When you visit this bar inspired by worldly wonders, Cahill has one recommendation: “Throw your expectations out the window and be open to expanding your palate.”
