47. Justin Piazza of La Piazza Al Forno and La Piazza PHX 

If Justin Piazza had his way, he wouldn't have to worry about the technical ins and outs of running a restaurant. He'd just stand in front of one of his wood-fired ovens and make hundreds of Neopolitan-style pizzas a day. But the reluctant restaurateur doesn't get to do that, because these days he's the man behind two of the Valley's most authentic pizza spots, Glendale's La Piazza Al Forno and downtown Phoenix's La Piazza PHX.

Piazza got his start in the culinary business working at his father's old-school Italian restaurant, and when his family's restaurant closed, he left the industry to give corporate life a try. It wasn't a great fit for the fast-talking, tattooed Piazza, who eventually decided to return to his roots by opening La Piazza Al Forno in downtown Glendale in 2003. The restaurant's since been featured on The Food Network, and Piazza opened sister spot La Piazza PHX in 2013. 

Today, Piazza dishes on deep-dish pizza and the best thing about working in a restaurant. 

My go to place for teriyaki rice bowls in Phoenix is Blue Fin. 

The best-kept secret in Phoenix is Shangri-La Chinese.

The best part about working in restaurant is seeing satisfied faces after they eat your food, and the worst part is the heat from the 1000-degree oven. 

Deep-dish pizza is sacrilege. 

My favorite tattoo is all of them!!! They are all one big tattoo!!!
