39. Grilled Octopus from Virtu Honest Craft

Virtu Honest Craft has quickly become one of the Valley's most notable restaurants. The refined Mediterranean fare from Chef Gio Osso is unique to the Phoenix dining scene and a totally welcomed breath of fresh air. Although this hip Scottsdale joint's menu is changing all of the time, you can pretty much count on every menu iteration to include the Virtu's best dish: the grilled octopus.
Honestly, octopus never really seemed that appealing before Virtu because gnawing on rubbery tentacles is kind of the assumption there. We were wrong and Osso has shown us the light. Octopus is freaking delicious.
If anything in this world has the cliched butter-like texture, it's the octopus at Virtu. Plus the perfectly charred chunks of tentacle are so smoky, you will likely be a cephalopod lover from then on. Add to that, herby fennel, lightly dressed peppery arugula, lemon chick peas, and calabrese chile butter. Just imagine all those flavors together-- that's balance, folks.
