Chary's Place

Downtown dining. What's it mean to you? Sports bars galore? Coffee shops? Nondescript pizza parlors and burger joints?

How about top-quality, inexpensive Cuban chow?

Chary's is something special, situated unexpectedly in what's otherwise pretty much a culinary no man's land. From the lighthouse mural called Castillo del Morro La Habana Cuba that's painted on the west side of the building to the creative cooking dished out by owner Chary Castro, this is a treat on the downtown street.

At Chary's, you'll stumble on masitas de puerco, lean pork medallions marinated in citrus juices and herbs. And arroz con pollo estilo cienfuegos, chicken cooked in wine, tomato, red pimientos and criollo herbs. Or try Chary's classic Cuban sandwich, stuffing bread with marinated pork roast, honey ham, Swiss cheese, Dijon and mayo to be baked and pressed.

Best Gourmet Mexican Restaurant

La Hacienda

Don't expect to find any piatas, colorful serapes or beer-touting sombreros here. This reproduction of a 19th-century Mexican ranch house is impeccably tasteful, down to the last carved, dark wood chair, white linen tablecloth and soaring silk flower arrangement.

But the lavish decor is just visual garnish for the most upscale Mexican food the Valley has to offer. Chips? No way, José! Instead, opt for high-end appetizers, like pasteles de jaiba (plantain-crusted crab cakes with chipotle oil) or tamal de pato (braised duckling tamale with orange honey masa and tomato nixtamal sauce). And don't even think of combo plates with entrees such as cochinillo asado (spit-roasted suckling pig stuffed with chorizo) and mero al sartén (pan-seared grouper with grilled cucumber pico and veracruzana sauce).

Whatever your choice, save room for dessert -- like La Hacienda's signature capirotada (fried three-milk bread pudding with port macerated berries and star anise ice cream).

When the weather's nice, request a table near the French doors, which collapse together for calming views of a courtyard dotted with palm trees, a bubbling fountain and strolling mariachis.

Best AZ-Mex Restaurant

El Bravo

A glance at El Bravo's menu is deceptively ho-hum -- beef burros, chicken tacos, chimichangas, combo plates.

Don't be fooled. This food may sound like Taco Bell, but it tastes authentic. Everything is made fresh in the restaurant's open kitchen, and owner Carmen Tafoya isn't shy about sneaking in the spices where appropriate -- her red chile beef packs a mean left hook. The tanker-size tamales are fluffy; the chicken green corn positively floats off the plate, studded with lots of fresh kernels, peppery white-meat chicken and cheese under green chile sauce.

Both sides of the border can rejoice!

We're not morning people. We admit it. If God had meant for people to be awake in the morning, he wouldn't have had to create alarm clocks.

There's little that can convince us to leave our warm bed at the crack of dawn (has anyone else noticed that a mattress never fits so perfectly as it does just before we're forced to leave it?).

Good chorizo is one of those things, though, that rouses our head from the pillow, summons us to our slippers, and gets us to greet the day with a smile.

That's a pretty big accomplishment for just $4.50, but La Cabana pulls it off with its huevos con chorizo meal (to be accurate, the dish should read chorizo con huevos, such is the generous ratio of highly spiced chile-vinegar-garlic sausage to egg). The sausage is a wonderful jump-start to the day -- dry, salty, smoky -- and only gets better when we fold it into a corn tortilla spread with gorgeously runny refried beans.

Sometimes we mix it up, adding thin guacamole from the on-ice salsa bar, alternating munches with bites of cool lettuce, radish, and cucumber drizzled with lime. A cold horchata drink is just the thing, too, tasting comfortingly like wet tapioca and soothing some of the chorizo burn.

The only problem? After finishing the plate, we're so stuffed, we want to go right back to bed.

Best Fish Taco

Rita's Mexican Food

Who'd have thought that something so simple could be so good?

While other places may fry their fish in batter and pile on the sauces and cheese, chef-owner Rita Aramburo leaves the Mrs. Paul's approach to seafood tacos to others.

The catfish here is remarkably flavorful, sautéed in chunks with tomato, onion and a touch of seasoning. The vegetables are soft, warm, and cooked down so their juices blend with the firm fish -- so savory, and much better than the cold veggie chop we find in other tacos around town.

The uncomplicated mix is wrapped in a grilled corn tortilla, with nothing more to add than a squeeze of lemon and a splash of Rita's killer spicy salsa.

Rita's fish tacos? We're hooked.

Best Mexican Seafood

San Carlos Seafood Restaurant

Sure, we could tell you that the seafood cocktails here are so fresh that you'll swear you can hear sea gulls overhead.

Or that the Sea of Cortez cookery (try the garlic shrimp with rice and beans) is so authentic that you'll actually think you can smell the salty ocean air.

Or that a visit to San Carlos Seafood is so enjoyable that you'll believe you've been magically transported to a cantina on a south-of-the-border shore.

Instead, we'd just like to steer you to the most delicious Mexican-style seafood the Valley has to offer, served up in a no-frills joint on a seedy stretch of East McDowell. But if you want to pretend that freeway overpass right down the road is an Aztec temple, be our guest. As for us, we'll have another ceviche tostada.

Best Green Corn Tamales

Carolina's Mexican Food

Had Fannie Flagg, author of Fried Green Tomatoes, grown up in south Phoenix and not Alabama, she might have written Green Corn Tamales instead.

And if she had, her inspiration couldn't have come from a more mouth-watering specimen of the titular delicacy than the steamed fluffy packets offered up at Carolina's.

Long famed for her tortillas, Carolina really shows her culinary flair with these heavenly blankets of golden masa wrapped around a few green chile slices, a sprinkle of fresh corn kernels and a molten glob of cheese. The bundles of joy are then wrapped in a corn husk, steamed and served piping hot at $1.20 a pop.

And maybe it's a good thing Fannie never got around to writing the book on green corn tamales. Looks like Carolina already beat her to it.

Best Carne Adovada

Blue Adobe Grille

Chile experts warn us never to touch any sensitive part of our body after handling spicy peppers. The Blue Adobe Grille's carne adovada will remind you why.

Red chiles grown in New Mexico are notorious for their wicked heat -- a fact that the chefs here adroitly exploit in their torrid sauce of this incendiary pork chili.

Dig pain? Drip some of the thick sauce straight onto your tongue. It's so fiery in the back of your throat you'll actually cough.

But even the most masochistic Mexican food buff will probably admit that the potent pork-and-pepper concoction is best enjoyed when wrapped in a flour tortilla, then tamed a bit with whole beans and rice.

But whatever you do, don't rub your eyes. You don't want to go blind, do you? Just eat enough until you need glasses.

Best Gourmet Restaurant

Mary Elaine's

We know we're in for a fancy meal when our server brings cute little stools on which our purses can rest. We've got a hint of fine things to come when we peruse a multi-course chef's tasting menu, ambitiously priced at $110 per person, plus $55 additional if we'd like paired wines (and of course we do). A "starter" sampling of Iranian Karaburun, sevruga, ostera and beluga caviar commands our respect with a price tag of $210.

Even a salad of romaine and aged Parmesan with cured lemon, walnuts and golden raisins sets us back $20.

High prices do not guarantee a wonderful meal, especially in a time when, anymore, even a marginal meal can set us back $30 an entree.

No, we're not quite convinced until our server presents us with an absolutely flawless amuse-bouche of perfect tuna tartare, complemented by gratis champagne. Or until the first jewel of buttery carpaccio of Black Angus beef dissolves on our tongue, and the last nubbin of Hudson Valley foie gras melts in our mouth.

Nothing served here is less than perfect. Even a deceptively peasant-looking cream of lobster soup startles with its superior character, lush as it is with medallions of seafood and seasonal mushrooms. By the time we're finished with an unspeakably elegant Earl Grey and chocolate cream pudding, we're true believers.

Mary Elaine's has long had the dubious distinction as the most expensive restaurant in town. These days, it's got plenty of contenders in the high-priced category. But for a truly gourmet, first-class evening out, there's still no competition.

Best English Pub

George & Dragon Pub & Restaurant

Christened after the allegorical tale of dragon slayer St. George, a man who later became the patron saint of England, the George & Dragon pub does well upholding the honor of a contemporary English tavern. Its wood-framed walls, high ceiling and massive beams affect a Tudor-style English pub of yore (who'd-a thunk this was once a Shakey's Pizza parlor?) and billiards, soft-point dartboards and interactive, big-screen games fashion a more up-to-the-moment scene. Football colors, military memorabilia and coats of arms decorate walls, and roomy leatherette booths form 'U'-shaped divans. There's a cozy dining room and a menu of reasonably priced yet palatable English fare. Crowning the carte du jour is the pub's authentic fish and chips.

The Dragon's vast array of ales, lagers and ciders will often spur pub-nostalgic Brits and pint-converted Yanks to a merry clamor sufficient to muffle the jukebox's rock-steady throb. After a potent pint or two, the George's brazen Britishness can make it seem as though you are actually on Queen soil.

But a word of warning, mate: In the event that you are unmindfully sloshed upon exit, just remember that it's five thousand miles to the nearest tube stop.

Best German Restaurant

Haus Murphy's

Tagessuppe? Bratkartoffel? Szegediner gulasch?

Nein, these only look like a bunch of bum Scrabble racks. In reality, they're soup of the day; German fried potatoes; and pork and beef with pepper, sauerkraut and spätzle -- all specialties of the haus.

Haus Murphy's, that is.

But instead of worrying about the correct pronunciation of these Deutsch tongue-twisters, simply dig into some of the best German food you'll ever run into without having to produce a passport.

Try the hearty hackbraten, an exquisite beef and pork meatloaf flooded with gravy. Or the kassler kotelett, two huge, smoked pork chops over a bed of sauerkraut. Whatever your choice, at least try to save room for Murphy's baked-on-site desserts -- the apple strudel and Black Forest cake are particular standouts.

Best French Restaurant

6th Avenue Bistrot

It's an inaccurate stereotype that the French are rude to Americans. Look at how they treat Jerry Lewis.

Need further proof? Just drop into the 6th Avenue Bistrot, where chef-owner François Simorte will be on you like a flash, greeting you warmly, shaking your hand, inviting you into his cozy little cafe. Sacrebleu! One can only guess how he treats his regulars.

If you're smart, you'll treat yourself to Simorte's specialties like scallops with lobster beurre blanc -- fresh, firm and succulent. Sautéed escargots in garlic butter are simply scrumptious, as is the coq au vin, which is as fine as you'll find in the French countryside. Cassoulet toulousain is a pure knockout, bringing a creamy stew of white beans, duck confit and sausage. And after dinner, Simorte will undoubtedly try to interest you in his luxurious mousse au chocolat.

Oui, surrender.

Middle Eastern Bakery & Deli

It isn't very pretty what a town without pita can do.

Thanks to the Middle Eastern Bakery & Deli, that's one problem Phoenix hasn't had to face in more than 20 years.

Much more than a place simply to buy authentic Middle Eastern manna, this exotic deli's our choice for Mediterranean treats such as dolmades, spinach pie, gyro meat, baklava, falafel, hummus and baba ghanouj. In addition to an impressive selection of cookbooks from the region, there are shelves of imported spices and condiments the likes of which you won't find anywhere else in town.

Whether you eat in or take out, Middle Eastern is worth cheering about. Tabbouleh, boolah!

Best Pacific Rim Restaurant

Kona Grill & Sushi Bar

When it comes to Pacific Rim cuisine, Kona isn't coasting.

Get past the spectacular decor (a 1,000-gallon aquarium, rich mahogany accents and more beautiful people than you can shake a tiki torch at) and you'll discover there's some real creativity going on in this kitchen. The Pan-Asian cuisine inspires such delights as Maui tacos, stuffed with blackened catfish; and Pan-Asian noodles, tossed with marinated beef tenderloin and Asian vegetables in a spicy black bean garlic sauce. These are the flavors that distinguish this polyglot cookery, and Kona delivers every time.

Best Italian Restaurant

Maria's When in Naples

Maria Ranieri charmed us back in the '80s, when she evolved as the magic behind the award-winning pasta at Tomaso's restaurant. Then she bought another Tomaso enterprise, When in Naples. That was more than a decade ago, and since then, Ranieri has developed her restaurant brilliantly.

Recently renovated to add a gardenlike enclosed terrace, the sumptuous space is decorated with seaside murals, red brick walls and a copper-domed, exposed kitchen. Very Italian.

But it's the food that gets the heart pounding, celebrating Ranieri's now-famous handmade pastas, and a signature antipasto display in the eatery's foyer. Some of our all-time, flat-out lusted-after creations are the ravioli di Zucca (butternut squash filled, in a four cheese sauce) and Vitello alla Maria (veal sautéed in lemon butter with wild mushrooms, capers and artichokes).

Gourmet magazine has named Maria's to its list of America's Top Tables. Save us a seat.

Best Neighborhood Italian Restaurant

That's Italiano

The owners of That's Italiano pride themselves on the fact that everything in the tidy, exposed kitchen is made on the premises. In fact, they claim to do everything on-site "except butcher the chickens."

But who's squawking? The tantalizing menu lists everything you'd expect to find in an Italian mom-and-pop operation -- 13 pastas and eight entrees, plus salads, focaccia, pizza and calzones. It's got all our favorites, from spaghetti topped with thin-sliced homemade sausage and mild tomato sauce goosed with fresh, whole-leaf herbs; to chicken parmesan with breast pounded so perfectly thin we could slide it under a door. Pillowy-crusted pizza's another pleaser, topped with handmade mozzarella so silky it looks like butter above our favorite "special" toppings of sausage, ham, salami and prosciutto.

The eatery's packed with the friendly charm you expect in a neighborhood trattoria, with crisp white and blue tablecloths, a seaside mural and clouds painted on the ceiling. Italian acoustical music fills the air, and there's even live talent on weekends.

The owners aim to please and do their best to honor our special requests. Just hold the flying feathers, please.

Best Steak House

Harris' Restaurant

Have any doubts about the quality of the cuts at Harris'? You can meet your meat, proudly displayed in the aging coolers off the restaurant's entry. All the Certified Angus Beef is dry-aged on the premises for 21 days.

The soothing, Southwestern motif here might not instantly scream "steak house," but wait until your meal arrives. There's nothing light and fluffy about these mesquite grilled slabs. Our favorite is the Harris' steak, a New York sirloin served bone-in for optimum, juicy flavor.

And while other steak houses may put the squeeze on customers for side dishes, Harris' knows a real steak house serves the potatoes, too. Entrees include fresh vegetables as well, thank you very much.

For just a buck or two more, you can customize your cut of beef, enjoying it blackened, peppercorn crusted, Roquefort glazed, or smothered with caramelized onions and mushrooms.

Cowabunga!

Readers' Choice: Outback Steakhouse

When made correctly, a chimichanga is a wicked indulgence of crisp shell and juicy innards. Mangos knows this. It also knows that for a killer chimi, the staples, including the hubcap-size flour tortillas, must be freshly made. Equally important is meticulous deep-frying. The shell must be good enough to eat on its own, and never hidden under buckets of sauces, melted cheese or olives stuck with tiny paper Mexican flags. Scoops of fresh guacamole and cool sour cream are appropriate accouterments, and Mangos serves them alongside its chimichanga.

There can be no compromising on meat, either. Mangos does it well with succulent pork, the hearty chunks swimming in tingly green chile verde sauce; or as chile rojo, with red sauce kicked up to an even higher octave.

The crowning touch to a cherished chimi? Ice-cold chopped greens, tomato and fresh jalapeo. Long live the Mexican-American invasion.

Best Cowboy Steak House

Reata Pass

This funky cowpoke cantina has been slinging steaks since the 1950s, dished up chuck-wagon style with all the fixin's -- tossed salad, baked potato, beans and squishy rolls.

In true saddle-tramp style, there's nothing fancy to speak of here, just an honest, mesquite-grilled slab of juicy, marbled-for-flavor beef. The 14-ounce New York steak hits the spot just fine, although ravenous urban cowboys might opt for Reata Pass' signature two-pound T-bone.

For Wild West buffs, Reata Pass' history is almost as delicious as its grub. Originally a stagecoach stop on the way to Fort McDowell and Prescott, it maintains portions of the old 1880s stage road. The landmark's since been featured in a number of movies (including Bob Hope's Cancel My Reservation) and old-timers still talk about the special chair former owners had to construct for "Tom Ton," a 500-pound regular.

No longer located out in the boondocks, the onetime desert hideaway helped introduce several generations of tourists to Arizona hospitality. It's a tradition that Reata Pass continues today -- but out-of-towners will have to take your word for it that the place was once surrounded by virgin desert, not acres of look-alike custom homes.

Best Bread Bakery

Willo Baking Company

Need to stock up for your next Miracle of the Loaves and Fishes? The angel-kissed golden crust of the bread churned out seven days a week at Willo is a real miracle in itself.

This small boutique bakery uses no sugar, meat or dairy products in preparing its heavenly roll call. We're especially partial to Willo's cranberry-hazelnut rolls and bread, generously studded with moist, sun-dried cranberries and large, crunchy chunks of toasted hazelnuts. And we'd even crawl on our bellies like you-know-who to get to Willo's divine kalamata olive bread, available in two loaf sizes, not to mention its only-on-Sunday onion rye.

With Willo's celestial manna, who needs Devil Dogs?

Best Greek Restaurant

Greekfest

The Greeks had a word for it. And after dining at Greekfest, so do Arizonans: Delicious!

What makes Greekfest so great? For one thing, owners Susan and Tony Makridis don't hold back on flavors, tempting us with dishes heavily perfumed by aromatic olive oil, lemon, garlic, dill, mint, oregano and other herbs.

The variety of dishes is a mouth-watering romp through the Greek countryside. Whether you're in the mood for oktapodi skaras (grilled octopus in cabernet sauce), shrimp saganaki (with feta, pine nuts and kalamata olives) or exohiko (lamb with Kasseri cheese in phyllo), rest assured the Makridises will work their magic for you.

Waiters wish you "Eis hygeian" -- to your health -- when pouring your wine. And when our saganaki arrives, the mild kefalograviera cheese is soaked with brandy, then, as it's flamed at our table, all the nearby waiters shout a hearty "Opa!"

Best Mexican Bakery

La Purísima Pasteleria

Short of driving three hours to Nogales, La Purísima is the most authentic south-of-the-border-style bakery you're likely to find.

Among its straight-from-the-oven offerings are pan dulce, a traditional slightly sweetened bread. Other Mexican taste-tempters include libros and orejas fashioned from flaky puff pastry and sprinkled with sugar, fruit-filled empanadas (including pumpkin and pineapple), galletas (cookies) frosted with eyeball-searing hot pink icing, and seasonal Day of the Dead pastries.

Should all this kitchen handiwork touch your inner mamacita, the bakery also carries fresh masa, savory corn dough that can be used to make your own tamales, sopas and chalupas.

Best Wine Store

Sportsman's Wines, Spirits and Other Flavours

"It doesn't matter how a wine is drunk, as long as you are."

So said legendary culinary writer M.F.K. Fisher. She was kidding. Great wines are serious stuff, and no one knows that better than the oenophiles at Sportsman's.

The Staff here is the most knowledgeable in town. We've never been able to stump them, even when it comes to arcane vintages. All the fancy labels are here, like Romanée-Conti and Yquêm (France), and Trockenbeerenauslese (Germany), as well as rare sherries, vintage ports and champagnes.

Sportsman's also has the largest selection of wines in the Valley, and if what you want isn't on the shelf, someone will get it for you. If money is an object, the staff at Sportsman's will help you find a luxurious choice for the few pennies you have to rub together. If you're not sure what you want, you can sample more than 60 wines by the glass at the tasting bar.

We'll drink to that.

Best Middle Eastern Grocery

Yusef's Middle Eastern Restaurant, Grocery & Deli

Yusef's is the one-stop-does-it-all shop for exotic Middle Eastern cooking ingredients -- so essential if you're in the throes of planning a big Ali Wood-style bash.

Though it may be short on veiled belly dancers, Yusef's does manage to cram in hundreds of fresh, frozen, canned, bottled and dried supplies your regular grocer would never dream of stocking in a thousand and one Arabian nights.

Like bulk packages of powdered sumac and Jordanian zaatar, a classic spice combo of thyme and sesame seeds used with pungent olive oil for warm pita bread dipping (Yusef's offers a nice selection of oil and various ethnic breads, too). Or kadaifi, shredded phyllo dough used to make Middle Eastern desserts just like Aunt Arpina used to whip up.

In fact, it's doubtful there's anything Yusef's doesn't carry in the way of hard-to-find North African and Middle Eastern culinary components -- except, maybe, bleating, ready-to-slaughter lambs for shish kebab.

Best Place to Find the Wurst

Schreiner's Fine Sausage

Better cancel that flight to the Bavarian Alps you booked because you're craving authentic, homemade European-style sausages. They're being stuffed and cranked out right here in the Valley by Schreiner's, whose funky smokehouse store has remained virtually unchanged since it opened in 1958.

On the off chance you can't find anything you like from more than 100 different international recipes owners Gary and Nancy Schiller use regularly (including ones for Polish kielbasa, German brat and bockwurst and Hungarian kishke), give Schreiner's your own secret recipe. For a price, you can get brats just like Grandmutti used to stuff. Or you can opt for Schreiner's special line of low-fat, high-flavor chicken sausages that rival its fat-filled kind.

And what to do with that wildebeest you shot on your last African safari? No worries -- Schreiner's will even make fresh or smoked sausages from any prepared game you deliver to them.

Best Indian Restaurant

Taste of India

Indian cuisine is renowned for its creative use of spices, and Taste of India doesn't hold back. The seductive scents hit us as soon as we walk in the door -- onion, cumin, garlic, turmeric, coriander, chili powder, mustard, fenugreek and ginger root.

Whether we're there for the bargain-priced lunch buffet, or for the equally affordable dinners, the smell has us salivating before we sit down.

Try the lamb kashmiry, resting in an ethereal cream sauce blossoming with apples, pears and almonds. Chicken makhni is another blissful dish, bringing tandoori-baked chicken simmered in velvety tomato sauce. It's all the better that Taste of India believes in huge portions.

This is also where we go for a broad selection of great seafood dishes, such as shrimp sagg, a decadent ocean treat of jumbo shrimp with spinach, broccoli, herbs and yes, spices.

Four Peaks Brewing Company

This is getting annoying. Four Peaks is the Tiger Woods of Valley brew pubs, consistently topping every local publication's "best of" lists despite facing ever-increasing competition.

This year, the Tommyknockers Brewery & Pub chain opened a franchise near Bank One Ballpark, and damn, it was a close call. But Four Peaks' malty stout, its airheaded blonde and smoky-smooth amber triumphed once again. How do they keep winning? One year -- and beer -- at a time.

Best Healthful Eating

Green Leaf Cafe

The road to health -- like that to hell -- is paved with good intentions. Not to mention scads of diet-busting restaurants and fast-food joints serving up nutritional no-no's guaranteed to steer you off course.

But thanks to the good -- and good-for-you -- eats at the Green Leaf Cafe, you may finally make it to the finish line in fine fettle.

An international food bazaar of body-beneficial provender, the cafe serves up healthful dishes accented by the cuisines of Persia, the Mediterranean, Italy, America and Mexico, as well as Cajun and the Orient. Vegetables are everywhere, tofu shows up here and there, and brown rice with lentils (a fully balanced meal in itself) comes with almost every dish. The magic, though, is in the fresh herbs and spices -- oregano, basil, mint, dill, fennel, cumin, garlic, capers, parsley, ginger, fenugreek, cilantro and more.

All is not green, however. Despite a menu with a heavy vegan slant, the kitchen also offers entrees containing chicken, turkey, fish and eggs -- but no red meat. There, don't you feel better already?

Roland's Market

With its high alcohol content and low cost, a 40-ouncer of malt liquor is simply the cheapest way to get tanked. So it's no surprise that this bitter, golden blend is readily available in areas where most pants pockets jingle with welfare coins, minimum-wage earnings and the grimy coin of hard-earned handouts.

Near downtown Phoenix, the malt shop of choice is Roland's, a Van Buren market that offers a staggering array of decisions for those with few choices to make. Then head east to Hiro Sushi, home of the Valley's most inscrutable eats. Fourteen lunch combinations present a dizzying array of teriyaki, tempura, gyoza, katsu, sushi and sashimi. Dinner combos, meanwhile, are a veritable feast of build-your-owns, conveniently priced per how many items you order. Your customized meals are prettily laid out in red lacquer trays and decorated with rice, miso and salad.

Specialties include salmon teriyaki, sanma (pike), saba shioyaki (mackerel), fried oyster and ginger pork. Sushi gets creative, too: Arizona roll (asparagus, scallop, avocado, cucumber); crazy roll (spicy tuna, avocado, smelt roe, fried shrimp, wrapped in pink soybean paper); and ribbon roll (spicy tuna, salmon and avocado).

Hiro's selections are beautifully fresh -- just ask the man himself. He'll happily bring out an entire fish for you to inspect, proudly claiming, "We just got this in today."

What's a nice grill like you doing in a place like this?

At Arisoo, the grill is installed in a table, cooking up some sensational meats over gas flames. Treats like gal bi (short ribs marinated in soy), bul gogi (thinly sliced marinated beef tenderloin), dak bul gogi (chicken) and deaji bul gogi (pork).

Guests spread lettuce leaves with bean paste, rice, and their choice of pickled condiments like cabbage, radish, broccoli, bean sprouts, soy potatoes, cucumber, zucchini, garlic, kimchee and jalapeo pepper. The huge assortment of veggies is spicy hot, just the way these diners like them. Diners add the done-to-a-turn meat, wrap up the lettuce like a burrito, and munch happily away.

Good grill.

Man does not live by bread alone. He needs a good bagel, too.

For more than two decades now, Chompie's has been surpassing our bagel expectations with always -- always -- the best bagels we've ever found in this town.

Chompie's was king of the bagels before the doughy works of art were cool (remember the bagel explosion in the '80s?). While many of the wanna-be bagel bakers in the Valley have gone extinct, Chompie's is still going strong.

Why? It's got 35 varieties of New York-style bagels, in our favorite flavors like salt, poppy, sesame and sourdough. But it's also got designer choices, like zucchini, Cheddar, banana nut, jalapeo and chocolate chip bagels. Most important, all bagels are handmade, baked fresh and smothered on both sides with their toppings.

You can't build a better bagel than that.

Best Camarón

Acapulco Bay Company

The shrimp here are served in a molcajete, a large bowl carved out of lava rock and sent to the table bubbling hot and furious.

The dish is called Camarón Azteca, and the volcanic container keeps the fresh-from-the-oven meal wickedly warm. It's a good thing, too, because it takes us a long time to work our way through the Vesuvius-size mound of Guaymas shrimp; in any other dish, the shrimp would get cold.

Much of the magic in the bowl comes from its voluptuous sauce, essentially chunky, chile-rich salsa blended with Mexican white cheese. We're told there's no butter involved, but it sure tastes of it -- a reaction of the milky cheese melted at such high temperature, we suppose.

Duck & Decanter

Tired of cheese choices at your local grocery store being limited to Cheez Whiz, Velveeta and boursin-in-a-box? Cheeselike food substances are conspicuously absent at Duck & Decanter, whose long list of not-for-the-lactose-intolerant dairy specialties would turn the head of even a hardened Wisconsin Cheesehead.

This place is the only one we've found around town that seems to always stock manchego and mahon, two nutty, semi-hard Spanish cheeses craved by hard-core cheesephiles. They've also laid in a good store of Old Brugge, chevegne and Père Joseph, all made by Belgian Trappist monks -- and don't pass up the double-crème Brie layered with pesto and toasted pine nuts. Duck & Decanter's helpful cheese-department head, Christopher LaFollette, is known to pass out samples, so there's no question as to what you're buying. The only thing Duck & Decanter doesn't stock is Metamucil, which you will certainly need if you shop here on a regular basis.

K-Rico Cafe & Bakery

K-Rico Cafe & Bakery is tiny, but those with a nose for things sweet should keep sniffing 'til they find this tropically appointed strip-mall storefront. Owner Elsie Lara, a native of Puerto Rico, packs a lot of fabulous Caribbean-style pastries into her shop. It's worth a cross-town trek to bite into one of K-Rico's flaky quesitos, made of buttery puff pastry and stuffed with sweetened cream cheese; or a tembleque, a cinnamony Puerto Rican coconut pudding that's a Caribbean classic.

Restaurant Oceana

Restaurant Oceana prides itself on serving just-caught seafood on a daily changing menu. For us, this means sparkling ahi, Maine day boat scallops, Atlantic salmon, Hog Island oysters, Dungeness crab, Alaskan halibut and more. And though such seafood is available at many other places around town, Oceana gets highest marks not only for its unparalleled freshness, but also for creative preparation.

Billed as American cuisine with Asian and French overtones, the menu boasts dynamite dishes like miso-marinated Chilean sea bass with bok choy, shiitake, and jasmine rice, plus our absolute favorite: mustard crusted trout with leek whipped potatoes, snap peas and grilled red onion pan sauce.

We're especially hooked on Oceana's tasting menus, bringing us four-, five- or six-course feasts, paired with wines if we like. The experience makes relaxing in this elegant place easy, lounging under portraits painted by such greats as local artist Frank Ybarra, fiddling with the colorful fish figurines decorating our table, and watching what's up in the exposed kitchen.

There's always another fish in the sea, so the saying goes. We're happy enough with what we've found at Oceana.

Most people go to Wild Oats for the organic fruits and vegetables. We go for the potato chip samples.

During a recent visit, five different flavors were presented for our gustatory inspection: sweet potato chips, cheese puff chips, garlic-flavored chips, blue chips and corn tortilla chips, all proffered with a generous helping of sample salsa. Which should we buy? Hmmm, better have another chip.

But if there's really a judgment day, rest assured the honor system gang upstairs will know when you've made unnecessary third and fourth visits to the vinegar-flavored chip bowl in aisle two and they have the incriminating store video footage to prove it.

When the dinner hour is approaching and we have to stop off at a grocery store to pick up a few things anyway, we welcome the grab-and-go meal ideas designed to make our hectic lives easier. But since discovering that some AJ's feature hand-tossed cooked-to-order pizzas, we have taken those other plastic-wrapped pizzas off our in-a-pinch menu list.

At AJ's you'll pay more, but those hot, gourmet-style pies are well worth it. For the traditionalists, the stores offer tasty pepperoni, sausage and the like. Those with more discriminating palates (why else would you be shopping at such a chichi store?) will love the delectable specialty pies, like spinach feta, garlic chicken and the Monte Carlo, featuring artichokes, goat cheese, red onions and fresh basil.

Another plus? Call your order in ahead of time, and your pizza will be ready when you're finished shopping.

Best Cocido

Lulu's Taco Shop

Should soup be served in a wine goblet? Only if it's as special as the cocido crafted by Israel and Lourdes Aviles, owners of Lulu's. For more than a decade now, the Avileses have been tempting us with their authentic, Guadalajara-style cooking, including dreamy cocido, a traditional beef stew.

Thinking Dinty Moore? Don't. Cocido is more like soup -- but soup with an attitude. The clean broth boasts flavor much too intense for its light character. It looks like pale bouillon laced ever so slightly with orange oil, but explodes in beefy force, underpinned with cilantro and just enough salt to tingle our taste buds.

Its body makes it more like stew. Certainly it's as full-figured as the voluptuous seorita mural on Lulu's wall, the broth gorged with soft zucchini, celery, green pepper, fall-apart-tender beef, onion, and corn-on-the-cob halves.

This soup makes a meal. Served with soft, corn-studded rice, smoky refried beans and a tortilla, Lulu's cocido is one awesome comida.

Best Place to Find Fresh Fish

Fish don't get much fresher than when they're flopping around in a tank of water, like they do at 99 Ranch Market. This upscale Asian supermarket's large aquarium tanks virtually teem with live catfish, tilapia, freshwater blue eel and Dungeness crab.

And if you just can't bear the thought of ending one of our piscine pal's lives prematurely, there's always the option of choosing something already caught and packed in ice, like red snapper, robalo, carp and sheephead. But no matter what creature from the deep you end up selecting, 99 Ranch Market's experienced fishmongers will clean and prepare (and even execute) your finny favorite with samurai-like skill -- all at no additional cost.

Best Vegetarian Restaurant

In Season Deli

We were good kids and always ate our vegetables. We'll never refuse a radish, sneer at a squash or thumb our noses at a tomato.

Particularly not when they're crafted into such decadent creations such as the blue corn tamales served at In Season Deli. Seven different garden-fresh veggies are blended with three kinds of ground corn and spices, formed by hand and steamed to a mellow finish. Paired with a side of pinto or black beans, they're as nutritional as they are delicious.

The veggie sandwich, too, reminds us why we had no problem growing up big and strong. We like stuffing our toasted pita with hummus, tomato pesto, cucumber, tomato, bell pepper, sprouts, lettuce, red onions and carrots.

And for those who think a salad isn't substantial, we suggest In Season's five-salad sampler, with different choices prepared daily. We're particularly smitten by Caroline's Tomato Pasta, the arroz ole and the garden rotelli.

Vegetarian food can be sinfully tasty, too -- as one bite of the deli's homemade rice pudding proves.

We're believers. It's always the right time for In Season.

Best Place to Buy Aardvark to Zebra

You're planning on throwing an important dinner party for a bunch of fussy gourmets. They're snobs -- you know the type. "Oh, grilled swordfish and Gulf prawns over smoked mussel fried rice and mango papaya relish again?" they sniff.

An order from Gourmet Imports will shut their mouths -- at least until it's time to chew. But you have to pick up the phone to buy anything here; the enterprise doesn't take walk-in trade.

Gourmet Imports brings virtually any exotic meat you can imagine, often within a day or two of placing an order. Camel meat? Giraffe? Hippopotamus? Alligator? Kangaroo?

Gourmet Imports has it all -- zebra, beaver, llama, caribou, goat, Scottish hare, African lion, musk ox, raccoon, Rocky Mountain oysters, turtle and emu (all farm raised, of course.) This purveyor serves many of Arizona's finest resorts and restaurants, and can cater to your kitchen, too.

It's food that will drive even the most jaded gourmet completely wild.

Best Hot Pepper Sauce

Kim Bong International Market

The first time we heard about "the jerk in the restaurant" 10 years ago, we thought we were being told about some lout on a cell phone. But it was a dish new to the Valley, Jamaican jerked rabbit, served at RoxSand.

Today, jerk is available on many menus, usually involving chicken. Basically, it involves rubbing meat, fish or vegetables with a spicy marinade, then grilling or roasting it. But jerk is nothing without the jerk sauce. It's got to be torridly hot, enough so our eyes water, and we'll lick carpet if we have to, just for relief.

There's no better jerk sauce we've found than the infernal number sold at Kim Bong. It's called Walkerswood Traditional Jamaican Jerk Seasoning, and the colorful, reggae-themed bottle warns us it's "hot and spicy."

We say ya, mon, and how. This is the real thing, packed with scallions, black pepper, salt, allspice, nutmeg, citrus, sugar and thyme. The active ingredient? Scotch Bonnet peppers, a vegetable so evil that cooks are advised to wear gloves when cleaning them.

Best Upscale Southwestern Restaurant

Vincent Guerithault on Camelback

Chef Vincent Guerithault long has reigned supreme as master of high-end Southwestern cuisine. When he first introduced the concept in the mid-'80s, he was considered radical for his innovative combination of classic French cooking and flavors of Mexico and the American Southwest.

A decade and a half later, little has changed about his menu, cooking philosophy, or his well-deserved status as one of the Valley's most recognized chefs.

As always, the Southwestern influence takes center stage at Vincent's, showcasing chiles, native corn, and flurries of fresh herbs. Time-tested favorites include a rapturous salmon quesadilla, duck tamale with Anaheim chile, lobster chimichanga with basil pesto, and house-smoked fish, laid over a thin, phyllo-like crust dabbed with dill and horseradish cream.

Under Vincent's inspired direction, it's Southwestern with style, a region to believe.

Best Mole

Hacienda Mexican Food Restaurant

Only a supernatural being would have thought to combine more ingredients than those which make authentic mole.

There are as many recipes for mole as there are regions in Mexico. But our local favorite -- a rich, velvety sauce containing a dozen types of dried chiles, nuts, seeds, vegetables, spices, plantains and chocolate -- can be found at Hacienda.

You'll have to look carefully for the dish -- it's hidden under the à la carte offerings as enmolada de queso con carne o pollo. And don't be misled by the unbelievably low $3.95 price tag -- you can easily make a meal of these two corn tortillas, stuffed with gooey jack cheese and chicken or beef, then covered with a creamy blanket of the dark addictive mole.

Mole? Olé!

Best Casual Southwestern Restaurant

Coyote Grill

Coyote Grill shows us why good Southwestern food will never be the flash-in-the-pan trend critics thought it would be back in the '80s. Who could turn their nose up at citrus-crusted catfish in spicy orange chipotle sauce; or Southwestern beef Wellington, stuffing filet mignon in puff pastry with mushrooms and hot cascabel chile sauce? Not us, certainly.

No, we've got our schnozzes firmly buried in executive chef Farn Boggie's steaming-hot onion soup, the rich beef stock splashed with Corona beer, soaking with thick croutons that taste of Pumpernickel, capped with melting Swiss cheese and served in a ceramic crock.

We're happily face-first in a plate of decadent salmon, overflowing with huge chunks in puff pastry with mushrooms, spinach and parmesan cream.

The grill's setting is pure Southwestern style -- sleek with inset stained glass, copper accents and a big, inviting bar. After a few margaritas, we feel rowdy and ask to try Boggie's "adventurous" selection -- "Let the chef pick something for you. May or may not be from the menu (your waitperson does not know what it is, either)."

We've never been disappointed. Now that's what gives a cuisine staying power.

Ichi Ban

Good sushi needn't cost an arm and a tentacle, although it usually does.

Happily, Ichi Ban turns the tide on steep-priced swimmers with its buffet-style sushi spread, a staggering array of Pisces-in-the-raw that will set you back just $13.95 at lunch, and $20.95 at dinner.

Except for the price, there's nothing cut-rate about this all-you-can-eat fish fest that offers more than 50 items. The top quality selections include pale pink albacore tuna, bright red maguro, silky salmon, buttery hamachi, cooked shrimp, flaky kani, red snapper, scallop and eel. Other choices include baked salmon, gyoza, snow crab and tempura, as well as an impressive array of premade hand rolls.

Ichi Ban's sushi buffet? We'll bite.

Best Paleteria

Flor De Michoacán

It's almost impossible to walk five blocks in any Mexican city on a summer day without passing at least one stand or parlor that specializes in paletas. Paletas are a traditional, distinctly Mexican take on the Popsicle concept: frozen natural-fruit bars that border on a survival necessity in the withering Mexican heat.

So it's a bit ironic that the definitive Valley peddlers of this distinctly Mexican treat are two twentysomething gringo siblings based in Mesa. But Nathan Hatch and his brother Adam spent much of their childhoods picking fruit at their parents' orchards in Chihuahua, Mexico. When they had time off, they hung out at their favorite paleteria and learned the fruit-crunching ropes from the masters.

Their shop, Flor De Michoacán, opened in May, and it's already pulling in the crucial Hispanic crossover clientele, with its authentic paletas, agua fresca drinks and frescas con crema (sliced strawberries mixed in cream). There are a few worthy paleta stands parked on Valley street corners, but if you're looking for a real shop, this is the place to go.

Best Dim Sum

C-Fu Gourmet

C-Fu's got excellent Chinese food, and then some. It's got meals on wheels, and dim sum.

The huge restaurant becomes an autobahn during lunch seven days a week when the dim sum carts come careening out, their drivers dodging giant tanks full of fish, clusters of tables and quick-footed waiters clearing plates and refilling beverages.

Customers wave the carts in like taxis, choosing among the 60-plus items offered. Some ask for explanation; others just point and say, "Bring it on."

Here are some hints: Chow fun noodles, Chinese broccoli, pork siu mai and baked barbecue pork buns can provoke drooling. Any of the dumplings stuffed with meat or seafood are sublime. Fried shrimp balls, sticky rice in lotus leaf, stuffed eggplant and turnip cakes are heavenly, too.

We've sampled in San Francisco, New York, even China -- and C-Fu is definitely sum-thing special.

Best Nueva Mexican Restaurant

Norman's Arizona

Chef-owner Norman Fierros has been wowing us for two decades with his offbeat, innovative approach to Mexican food. From a small stand in a dicey south Phoenix neighborhood to his current, tony locale, he hasn't lost the innovative edge that put him on the map.

And when it comes to the culinary map, Fierros isn't afraid to go all over it, ingeniously mixing techniques and ingredients with something bordering on genius.

The addition of epazote, for example, a strong, citrusy herb, to his tacos de pescado, makes the simple fish and tortilla combo sing. Even an uncomplicated endive salad sparkles with queso cotija, the "Parmesan of Mexico," plus roasted Arizona pecans and mesquite honey vinaigrette. When we're looking for something really different, conejo asado gets our hearts thumping with chorizo-rubbed rabbit and grilled sweet corn. And don't even get us started on his sublime tamale hash.

Best "New American" Restaurant

Lon's at the Hermosa

Executive chef Patrick Poblete does a Southwestern-accented American comfort cuisine that is pure, rich indulgence with lots of heavenly fat.

This is Arizona luxury at its best, with surroundings to make every meal special. The gorgeous "cowboy" hacienda with its upscale dining room is tucked away at Paradise Valley's Hermosa Inn.

Chef Poblete grows his own fresh fruit, vegetables and herbs, and the menu changes based on what's the best of the season, with entrees that complement. Lon's fresh fish includes swordfish, salmon, trout and more, butter melting slowly on crisp-grilled skin, soaking into pliable fingerling potatoes and nestling with fresh veggies.

Don't turn down the pastry chef's sampler, wickedly fattening with custards, mousses, cakes, gelati, ice creams and fruits.

Best Margarita

Old Town Tortilla Factory

Old Town Tortilla Factory has a "connoisseurs guide" to its more than 100 premium tequilas. That's nifty. But even better is that we can upgrade our margaritas with any of their fancy tequilas for just an additional dollar.

The custom option is just one of the things that makes Old Town's margaritas so good. Fresh-squeezed lime juice and the house standard tequila are others. Even the most basic margarita here is spiked with Sauza silver, a bold and assertive favorite of tequila lovers.

Service makes us smile, too. Our marg is brought in a shaker, blended at our table, and left for us to refill our glasses. The setting, finally, makes our cocktails all that more delicious. We think the 75-year-old Scottsdale adobe home is intriguing, too, with its huge flagstone patio surrounded by 100-year-old pecan trees and its central fountain that often is set on fire.

We'll toast to that.

Bombay Grill

Tired of paying too much for junk food? Head to Bombay Grill, where, Monday through Saturday, you can enjoy a marvelous, all-you-can-eat feast for just $6.95. The buffet makes it a quick operation to fill your plates, stuff yourself and get back on the road.

Bombay Grill doesn't try to trick you with the typical all-you-can-eat spread of dozens of mediocre dishes -- quantity doesn't do it if the food doesn't deliver. No, the Grill serves daily selections including five vegetable dishes, three meats, soup, rice, breads, salad bar, and two desserts. The manageable selection means ample variety and quality control for the kitchen.

Tandoori chicken and beef curry are always winners. Saag pancer is a delight, blending spinach with Indian-style cheese and mild sauce. For dessert, try kheer, a delicious rice pudding.

Best Selection of Mexican Imports

Mercado Mexico

In the market for authentic Mexican furniture? No need to head for Nogales; just go south of the Tempe border, down Guadalupe way.

Mercado Mexico quite possibly has the most comprehensive inventory of Mexican home furnishings in the Valley. Statues, fountains, furniture, dishware and, yes, piatas are regularly imported from Guadalajara and Mexico City. And if your tastes run to the outré, you'll occasionally find oddball items like cow skulls, pieces of armor, or a tree-trunk bar.

If this shopping spree somehow lacks the authenticity of an actual trek to Mexico, you can always stop at a convenience market on your way home and pick up some packs of Chiclets.

Best Vietnamese Restaurant

Pho Bang Restaurant

Friend of pho?

Then you'll find plenty to like in this Third World hideaway specializing in the namesake soup that's a staple of Vietnamese cuisine. The menu lists 15 different varieties -- huge, steaming bowls of broth chock-full of rice noodles, a variety of cuts of beef, bean sprouts, serrano chile, lime and fresh herbs.

Move beyond soup and sample chao gio (spring rolls packed with ground pork, rice vermicelli and mushrooms), mi xao (egg noodles) or tom va bo nuong vi (a wraplike beef, shrimp and veggie dish you cook yourself on a tabletop griddle). Other authentic options include a variety of hot pots, chicken with lemongrass and marinated shrimp with raw vegetables. To wash it down, order from the long list of Asian beers.

If you can tear your eyes off your chopsticks long enough, you just might see presidential woulda-been John McCain. According to a blurb on the menu, Pho Bang is his favorite Vietnamese eatery -- and who should know better than a former POW who spent years savoring the native fare?

Best Chinese Restaurant

Gourmet House of Hong Kong

We admit it: Chinese calligraphy is Greek to us.

That said, that's the part of the menu we immediately go to when feasting at Gourmet House of Hong Kong.

Sure, the funky, fluorescent-lighted, coffee-shop-style restaurant offers the usual "one from Column A, one from Column B" suspects -- moo goo gai pan, kung pao, teriyaki, curry and fried rice. But adventuresome diners live for the thrill of exotic entrees, even when they contain unfamiliar ingredients.

The menu has English translations, of course, but they're often vague -- pork belly with taro; squid with green. Our method of ordering has never failed us, though. Ask for a recommendation or opt for a dish that's been ordered by one of the cafe's many Asian customers.

That's how we've discovered the joy of pork and thousand-year-old egg congee (trust us -- it tastes better than it reads); mouth-watering shark fin soup; hot and sour frogs' legs; and a mammoth plate of whole, head-and-shell-on salted shrimp. Forget about red lanterns, lacquered screens and laughing Buddhas. True to its adage, Flo's is "an experience in Chinese cuisine" -- and one unlike any other in town.

Instead, this high-tech eatery turns the stereotyped notion of a Chinese restaurant on its head with gray varnished concrete floors, gray sponge-painted walls, rows of blond wood tables and an innovative menu that will have the "with six, you get egg roll" crowd scratching its collective heads.

Meanwhile, diners with a yen for adventure will think they've died and gone to, well, Flo's.

Tossed salad in a Chinese restaurant? That's just the first surprise. "Chips and salsa" -- in reality, fried won ton with a chopped chicken "salsa" -- make a unique appetizer.

Entrees include an imaginative variety of shrimp dishes; other favorites include two-pepper chicken and honey beef. And leave room for dessert: fried won ton wrappers, wrappers stuffed with chocolate, fried and served warm with powdered sugar. With a menu like Flo's, it's always The Year of the Pig.

Best Chips and Salsa

Some Mexican restaurants have great chips. Some have great salsa. The red and green neon lighted salsa bar at Pica Poco Taco has them both.

The chips here are homemade, stacked high in a large bin atop the bar, where they're kept warm and replaced constantly through the day. They're thick and crisp, and customers are free to scoop to their heart's content.

Salsas, too, are homemade and fresh. Mild, traditional salsa is powerful, rich with tomato juices anchored by chunks of tomato, onion, chile and cilantro leaves. Sweet tomatillo salsa packs a one-two punch with marvelously tangy vinegar tones. A sign warns that the bright orange salsa Pica Poco is hot, and it is -- a smoldering purée hides heat that grips and won't let go.

Plunk some of each into the little plastic cups at the bar. Taste them all. But remember, as the sign above the bar requests, take only what you can eat -- "This salsa is too precious to waste." We'll say it is.

Altos Latin Bistro reminds us that authentic Spanish dining is a romance of flavors; a cuisine built on vibrant spices; a food celebrating the bounty of the Mediterranean. How do we know? Hey, it says so right on its decorative, leather-bound menu.

Not that you'll have any doubts after delighting in this colorful eatery's mouthwatering tapas, paellas, crema de mariscos (creamy seafood soup) and serrano ham-wrapped, Manchego cheese-stuffed shrimp. This is the type of stuff that makes us wonder what Christopher Columbus was thinking when he left Spain in search of a more exciting world.

Lamb chops, for example, practically dance under a "drunken" sauce of chile negro, garlic, beer and spices topped by cotija cheese. Wild mushrooms and guajillo peppers are rarely so well-respected as when they're served in Altos' soup touched with fennel and dry Spanish sherry. And what more could we want from beef than Altos' signature juicy filet mignon, topped with guajillo peppers, garlic, almonds and warm cabrales cheese?

We like this spicy Cajun stuff. Like grilled shrimp dipped in rémoulade, an infernal mix of mustard, mayonnaise and horseradish. Or hot boiled Louisiana crayfish, bobbing with new potatoes and corn in fiery spiced broth.

Other Cajun places around town may not believe how much we like the heat -- why else would they be so timid in turning it on? Not so at Justin's, where the good times roll in a heat wave of assertive flavors, always-fresh ingredients and creative menu choices.

Confederate catfish is a treat, blackened or grilled with shrimp in herb beurre blanc. So is Mardi Gras meat loaf, alligator tail meat ground with Cajun spices. And only Justin's can tempt us with palmetto chicken, encrusted with pecans in a roasted red bell pepper coulis, or Terrebonne tournedos, tenderloins in Creole mustard au jus.

The party never ends at this French Quarter playhouse, flocked with photos of the New Orleans Saints and a mural of street musicians. The joint rocks with zydeco music, and we eat to the beat, spooning brandy and chocolate bread pudding in a boisterous strawberry sauce.

Justin's is our best buy for a bit of the bayou.

Anyone who's spent time in Mexico knows that the food there isn't what we're used to seeing on our chain restaurant menus around town. All it takes is a four-hour drive to Puerto Peasco to discover that authentic-style Mexican food is lighter, more crisply flavored than we might expect, and highly reliant on fresh herbs, spices and vegetables. There's also a lot more seafood than just fish tacos.

A faster way to figure this out is to visit our favorite local taste of Mexico, San Diego Bay.

Don't expect ambiance -- there isn't any. But we don't care, not when we're contemplating Pescado Veracruzano, a Mexican specialty that indulges moist red snapper with a luscious coat of tomatoes, onions, chiles, capers and olives. Or when we slide that first joyous bite of camarones verdes past our lips. Food doesn't get much better than this, with shrimp tossed in sour cream, coriander, small green tomatoes, jalapeos, garlic and onion, sautéed in butter and covered in cheese. These spices sing like an opera.

For a true south-of-the-border fiesta, San Diego Bay's the real thing.

Sometimes we crave a good meal but don't want to put up with overly chipper waiters, bright interiors and hostesses telling us to have a nice night.

That's when we head to Hacienda Mexican Restaurant and the tiny taco stand hunkered in the shadows outside the kitchen door. The cart's an extension of the sit-down, full-menu restaurant, but operates only at night. We grab our food, climb in our truck bed and stretch out under the stars for a private, late-night feast.

Here, the cinema of life plays around us without invading our personal space. Low riders without mufflers rumble by, thump-thumping with rocket-powered radios. Headlights bounce off the corrugated metal wall flanking the restaurant, illuminating the shadowy creep of a street citizen just a few feet away.

Every night except Monday, as soon as dusk falls, the taco-hungry masses converge until the stand shuts down at midnight. Like us, they're here for wonderful charro beans (spunky with spice, bacon fat and veggies) and the wallet-friendly tacos. For just $1.25 each, the corn tortilla parcels include shredded, onion-stabbed pork adobada; carne asada; lengua (tongue); and cabeza (head meat). Everything is fresh, topped with splashes of red or green hot sauce, spoonfuls of puréed avocado and salted radishes.

Tacos de Juarez

At Tacos de Juarez, the cooks stuff their soft tacos with generous portions of mild-mannered tripes de leche (chunks of beef small intestines), pork, cabeza (beef cheek), carne asada and chicken. Hard tacos -- slicked with just enough oil to leave the slightest sheen on our fingers -- are crunchy vessels for moist carne desebrada (shredded beef), chicken and carne molida con papas (ground beef and potatoes), draped with Cheddar. Add the extras like crisp radish coins and fresh shredded lettuce, or sides of pico de gallo, electric green sauce and fiery red sauce.

Don't be swayed by the run-down exterior of the restaurant, partly hidden by a bus station for people traveling to Mexico. And just step over those folks stretched out on the sidewalk or in the parking lot behind the building.

Inside you'll find a bright and comfortable dining room packed with a workday lunch crowd that often includes a table of sheriff's deputies, a booth or two of City Hall staffers, and other taco aficionados.

Ordinarily, the prospect of paying $12.50 for a single taco would be enough to send even the most ardent Mexican-food lover into, well, shell shock.

But that's before beholding Golden Swan's majestic model, a saffron-infused corn tortilla about the size of a tea saucer. Presented on a bed of creamy corn spritzed with yellow and red pepper oil, the pricey gem is stuffed with two moist and meaty lobster cakes. To the side rests a crisp chayote slaw of jicama, carrot and zucchini in a cumin-spiked sweet vinaigrette.

Washed down with imported Panna water from Italy (go figure), this tony take on the lowly taco is enough to render a certain talking Chihuahua speechless.

Best Refried Beans

Rosa's Mexican Grill

More than just a side dish, frijoles are the glue that holds a dish together. They're the heart of a truly good Mexican meal.

What's an enchilada, after all, without soft, gloppy beans to mix into the cheesy sauce between bites? Fish can be the finest, but it soars to new levels when tucked into a bean-smeared tear of tortilla. And what would we do with the leftover shards of hard taco shell if we didn't have a gentle pool of refrieds in which to dip?

Rosa's loves beans, and it shows. Banish any thoughts of what other restaurants might fake as frijoles -- those sad, dried-out clumps that taste like, well, sad, dried-out clumps. No, Rosa's lard-free refrieds are gloriously soupy, indulgently oil-kissed, and smooth, studded with just enough whole beans for toothsome pleasure.

Don't know beans about frijoles? Just be glad Rosa does.

Medizona

This small enterprise features a constantly evolving repertoire of Mediterranean flavors that provide a mischievous zing to our Southwestern staples. Everything, from the crusty, baked-on-site breads nestled in a painted wooden box with ramekins of dips, to the signature prickly pear tiramisu, is a work of art.

Ordering is always intriguing. Will it be baklava with nubbins of plump rabbit, fig, quail egg and pine nuts? Or eggplant tacos with lamb, arugula, cucumber radish and Kasseri cheese in roasted tomato garlic sauce?

Perhaps charbroiled beef tenderloin in sun-dried cherry barbecue sauce plus green chile stuffed with butternut squash, smoked bacon and provolone cheese? Or salmon, grilled with achiote seed in morel and baby clam sauce with crayfish-corn risotto?

Medizona's chef-owner, Lenard Rubin, gave up a comfortable resort kitchen career to open his dream restaurant, and it's sure paid off.

Medizona opened to rave reviews and continues to draw a steady crowd. And, with just 13 tables, reservations are a must.

So how do you entertain an out-of-town "foodie," that live-to-eat restaurant buff who wants to sample our city's edgiest cuisine?

If you're lucky, you secure a reservation at Gregory's, where chef-owner Gregory Casale has put together a menu that takes world cuisine on a whirl. Ginger and lemongrass-cured albacore tuna (Thai) shares the pages with mussels vindaloo and naan bread (Indian), monkfish tajine with preserved lemons (Moroccan), and pan-seared Hudson Valley foie gras in a sweet potato tart (French). If his pumpkin Israeli couscous soup is available, you'll swoon over the rich garlic chicken broth.

The wine list is all-out global boutique, a short list that tempts us with unfamiliar-to-most-folks grape blends we love after the first sip. It's difficult to find these wines anywhere else, and there's no shame in asking the chef's advice on the perfect pairings.

Trust us: Even the most jaded foodie will eat Gregory's up.

Breakfast is the most important meal of the day. And it sure feels special when we lounge in Bistro 24's gold-and-green-striped silk booths, taking in country French accent pieces, sophisticated artwork and peeks at Valley glitterati sucking down $7.50 French press coffee.

This is where the lords and leaders of our economic, political and social scene come for designer dishes like Bicher muesli, steel cut oatmeal brûlée, duck hash and chocolate brioche French toast.

It's better to move and shake on a full belly, after all.

There's just something so civilized about a continental breakfast. It makes us want to toss on a long silk robe, tuck our tootsies into monogrammed slippers and snap open an Important International Newspaper to read while we nibble.

Unfortunately, our bathrobe is coffee-stained terrycloth, our dog ate our slippers, and we don't subscribe to any papers without a comic section.

So instead, we get dressed and head over to Pierre's.

Breakfast starts off with steaming, fresh-brewed French roast coffee or just-squeezed lemonade, orange juice or sparkling apple juice. Handcrafted pastries flaunt fresh cream and real butter, and weigh in at the size of small sofa cushions. Our favorite is Pierre's lemon brioche, topped with terrifically tart lemon preserve and powdered sugar. The dough is buttery, billowy and positively bursting with mind-blowing poppy-seed-studded cheese.

Who needs Tiffany's when you've got breakfast at Pierre's?

Best Place for a Grease-Soaked Hangover Breakfast

Bill Johnson's Big Apple

Your head feels like it's going to wrench itself violently from your body. Your stomach's threatening to eject its contents all over your shoes. You shouldn't have had that last drink.

Now, you need grease. The kind of good, old-fashioned, fatty, dripping grease served at Bill Johnson's to coat your stomach.

The Big Apple means big breakfasts, served country style in a setting so casual it doesn't matter that you look like you've been dragged behind a truck all the way to the restaurant. It's kind of dark, to soothe your bloodshot eyes. It's big enough that you can usually find a quiet corner for your pounding head.

Fill up on country ham, chicken-fried steak, bacon, sausage, T-bone or pork chops with eggs. Sweet-talk your stomach with three-egg omelets, blueberry pancakes and French toast (six massive slabs topped with nutmeg and cinnamon). If you've been really bad, stuff yourself with the Wrangler -- a full order of French toast, two eggs, a hefty ham slab, four slices of bacon or two saucer-size sausage patties.

After all, you've got to get your strength up so you can go out again tonight.

Best Sunday Brunch

Anyone can serve a huge Sunday brunch. It takes alarmingly little skill to toss together pedestrian scrambled eggs, table after table of mayo-based salads, endless wheels of cheeses, chicken done in by chafing dishes, and roast beast carved by sleepy resort staff.

Most skilled chefs can easily fashion a high-quality, dainty Sunday brunch, too. A talented chef can impress with sumptuous à la carte entrees, perhaps fancied up with a trip to fussy salad and dessert tables. But that's little more than an excellent lunch, isn't it? And let's admit it: Brunch isn't a true treat unless it's all-you-can-eat.

Marquesa has captured the best of both. The Mobil Four Star/AAA Five Diamond restaurant unites inspired Catalan cuisine with Italian and French influences for a drop-dead gorgeous unlimited tasting experience.

We don't eat for weeks in anticipation of a mid-morning tour of Marquesa's market-style nirvana. And not just to allow for greater gluttony, but to better savor the delicacies put forth by chef Reed Groban. The menu changes per availability of ingredients, but we can always count on the radiant treasures of the Mediterranean.

It's almost an embarrassment of riches, but we struggle bravely through, feasting on duck with cauliflower puree, lentil and sausage; fire-roasted couscous; paella; braised quail; veal empanada; turkey with hazelnut polenta; and caviar.

Does Marquesa's brunch cost a little more? At $49 per person, yes. But it's so satisfying that it's the only meal we'll want to eat that day. And since the open-air brunch isn't offered during the heat of summer, we've got some time to save up the cash, and the calories.

Best Reason to Visit the State Capitol

The area around the Arizona Capitol has always been pretty grim, and not just because it's populated half the year with the humorless mouth breathers we elect to represent us in the Legislature. The area is dense with government offices and run-down buildings, and there's never been so much as a decent cuppa joe within walking distance -- until now. The Capitol Coffee Co. pours espresso and Italian sodas, and offers a full menu of pastries, wraps, salads and sandwiches made on foccacia bread from the Willo Bakery. The place is airy, with funky art and mismatched furniture -- maybe a little too hip for Governor Jane, but certainly not for us.
Best Place to Eat a Meal Stoned

Richardson's Cuisine of New Mexico

Booths shaped like couches, throw pillows provided for the lumbar-conscious and portions so large they'd stymie late stoner Chris Farley -- Richardson's is the place to be after an early-evening bong session with your buddies, wife, dog or whomever. Who needs the harsh light of reality when you can't even remember your PIN number?

Richardson's dimly lighted adobe/ranch thing is comforting, even soothing to the dimly lighted head. Of course, you'll have to suffer the obnoxiously mainstream thirtysomethings who crowd the place, much like their SUVs in the parking lot, bumper to grinding bumper, but it's worth it. Besides, it's so dark inside, you'll forget about them once your draft lager (Richardson's has tons of them) and forearm-size burrito arrive. There are sports on the TV monitors, a moderately priced menu (forget the specials -- they ain't worth the coin), a smoker-friendly policy, and a waitstaff that seems to be glad they're serving your stoned countenances rather than another table of yuppie wankers.

One minus. Richardson's is always crowded, and without a reservation, a party of four can easily wait more than an hour. Toke it or leave it.

Best Downtown Lunch

Coronado Cafe

From the raspberry iced tea to the fresh-baked cookies, lunch at Coronado Cafe is the highlight of any workday.

Nestled in an old house in a historic corner of downtown Phoenix, the restaurant features a breezy patio and cozy rooms decorated with the work of local artists. Diners are seated in old school chairs, but don't expect cafeteria fare. The menu -- eclectic without being intimidating -- features daily soups and entree specials, along with staples like the chicken corn chowder, a meal in itself but great with a mixed greens salad or a Southwestern caesar. Another favorite is the roasted turkey sandwich, spiced up with cranberry-serrano chile chutney.

The staffers are friendly and they'll keep filling your iced tea long after you know you should have returned to the salt mine.

Long to escape the ugly, overheated concrete of downtown Phoenix during your noon repast? Located just 10 minutes from downtown, this pecan grove-cum-country oasis is the perfect lunch-hour antidote to civilization.

From September through June, The Farm Kitchen serves hearty sandwiches and delicious salads -- complete with bread and veggies made/grown on the premises -- in sturdy baskets, picnic-style. Lounge at outdoor tables or toss a Mexican blanket on the ground, listen to classical music or the sounds of nature while you enjoy grilled eggplant on sourdough or a Waldorf salad.

And if you've still got time before you return to work, snag a piece of pecan pie. It'll put a smile on your face that will last until you're back to the daily grind, downloading Internet porn from your station at work.

Best Lunch Hideaway in an Industrial Park

Crackers and Co. Cafe

Location, location, location?

Don't tell it to the owners of this culinary find, a swell little soup 'n' sandwich joint hidden away in the bowels of a Mesa industrial parkway.

Despite its less-than-high-visibility locale, however, Crackers and Co. sees a lot more business than many of its high-profile competitors. Arrive early for lunch to avoid the crunch of regulars who congregate here daily for more than a dozen fresh soups (the cream of spinach and artichoke is pure heaven) and an equal number of made-from-scratch desserts.

Sandwiches, salads and pasta dishes round out a hearty menu that also includes signature creations like the Drunken Chicken Sandwich (poultry in a wine-garlic sauce) and an unusual apple-spinach salad with charbroiled chicken. But save room for dessert -- the house specialty, a warm blackberry cinnamon bread pudding, is also must-try.

Open for breakfast and lunch only, Crackers and Co. is tucked away behind the Home Depot on South Country Club Drive, just off the Superstition Freeway. This is one industrial secret everyone should know about.

Best Place to Get Aroused While Waiting for Your Burro

The consummate scene for Scottsdale's partypoids, this Rocky Point-themed taco joint offers several walls of shame with hundreds of patron photos. Many depict that most peculiar of modern mating rituals known as the Body Shot, which is always more about the body than the shot.

The bodies shown here belong to bronzed guys with "set clippers on two" haircuts and girls crammed into skimpy tube tops, the better to show off their sunless-tanning-cream glows. In Kodak moment after Kodak moment, the gals are seen lying on tables, their Victoria's Not-So-Secret pushed aside, while casting come-hither, "I'm soooo drunk" smiles at equally snockered frat boys sucking cheap tequila off their breasts.

The dimly lighted cafe offers more sophisticated ambiance than Denny's, and is the perfect place to slouch in a booth and chow down after a hard night of partying. Though the restaurant is also open during the week for traditional dining hours, Punky's shines brightest well after last call.

Why go to a bar in the middle of the day when you can't down a few brews because you have to head back to work? At Harvey's, the burgers and a quick game of pool are reason enough.

Harvey's is small -- just a few booths, tables and a bar. Harvey's is dark -- most of the lighting comes from the glow of beer signs and a Twilight Zone pinball machine. Harvey's is run-down -- bare concrete floors, ratty walls and wires hanging from the ceiling. Harvey's is smoky -- neighborhood types crowd the bar, accustomed to popping their first brew at noon.

At Harvey's, there is a pair of pool tables off in a side room, where we can plop down a few bucks for a quick game. And between shots, we gorge ourselves on out-of-this-world wineburgers. The beef is flooded with Burgundy as it cooks on a special, extra-thick grill (to keep the wine from evaporating too fast), drenched four times, topped with cheese and drenched twice again.

So we go back to the office smelling of smoke and alcohol? Playing hooky at Harvey's makes us very, very happy.

Best School Meal

The Desert Oasis makes a mockery of the term "starving student." This restaurant showcases the skills of students enrolled in Scottsdale Community College's Culinary Arts Program, and it offers complete five-course meals for a mind-boggling bargain of just $17.50 per diner.

So maybe the students aren't being treated to the multicourse feasts they prepare, but we'd bet there's a whole lot of tasting going on in the school's kitchen.

This is no cafeteria food. Faculty includes three full-time chefs and three part-time chefs. They take their work seriously, leading students through rigorous training on cooking, presentation and white-tablecloth service.

Hey, we're happy to help the kids with their homework. Especially when it means we get to gorge on dishes like mussels with mango citrus salsa, spinach vichyssoise, poached Seckel pears with prosciutto and wild rice, oriental petrale sole en papillote, daube of lamb, coffee cinnamon flan and pistachio citrus cheesecake.

The dog ate the homework? Hardly. It was us.

Best Place to Take Your Harley to Dinner

Harley-Davidson owners are a special breed. After spending multi-thousands to buy their bikes, and many thousands more customizing their wheels into nothing short of motorized art, it's understandable that they wouldn't want to be separated from their bicycle babies.

Even if it's more of a stripped-down warrior ride, a Harley becomes an extension of its owner on the road. Indeed, it's such a personal friend that most true Harley riders can pick out their bike while blindfolded, guided by their scooter's distinctive potato-potato-potato call. It's just as a mother knows her infant's cry from any other in the world.

The folks at The Hideaway know better than to come between such love. Open just two years, The Hideaway has become the place in town for serious bikers (and jealous gawkers) to gather. On weekend nights, in fact, it's often difficult to hear the piped-in Southern rock, the clicking of pool balls or your conversation with the always-friendly bartenders. That's because of the herd of thundering Harleys parked mere feet out the front door, cozied up like pampered pets to the railing of The Hideaway's wood plank porch.

The best seat in the bar is on this porch, sipping a good, honest pour, and snacking on country-style steaks, fish fry, burgers or sandwiches. Even if you're not lucky enough to own a bike, it's a kick to watch the blessed ones, cuddled up with their charges, caressing the chrome and planting baby kisses on the handlebars (grown men, no less).

Is it fancy? Are you kidding? It's a dirt parking lot, the bar dressed up with concrete floors and walls hung with posters of bra-busting bike rally queens.

Because there's no need for expensive decor -- all eyes are on the beautiful beasts parked outside.

Step up to the counter, order your choice of meat or poultry -- even prime rib and trout -- in whatever quantity you want. As Dusty's menu says, "by the pound or by the slice, how much you order determines the price."

The friendly gent behind the counter hacks off your selections with a glistening cleaver, weighs the meat and wraps it in white butcher paper. He tosses it on a tray with some buns -- plus lots of extra sauce, of course -- and sends you off to a checker-clothed picnic table.

Once settled, you assemble your sandwich or simply dig in. If you're craving sides, pluck beans, creamed corn, coleslaw, potato salad or macaroni salad from an iced-down watering trough near the cash registers.

Soon, you'll be groaning in delight at smoky, fall-off-the-bone baby backs, meticulously fat-trimmed prime rib and melt-in-your-mouth pulled pork. The excellent thin, peppery sauce gets on your face, your hands and usually all down the front of your shirt. But as long as most of it gets in your mouth, you won't be complaining.

Normally, having your meal slid through a small opening in the wall isn't a good thing. It reminds us of a brief time when we had a little, shall we say, less liberty than we do now. Of course, it was all a big misunderstanding, and as far as we know, our records were wiped clean years ago.

Still, there's a definite charm to the jailhouse-style food service, especially as it's practiced at Hart & Soul, a south Phoenix rib shack.

We know the routine well. Step up to the glassed-off ordering counter. Study a brief listing on the wall -- catfish, chicken, pork chops, maybe a barbecue special. Push a doorbell, and wait for a cook to slide open a tall, narrow security slot crossed with heavy black steel mesh. She takes our order, and the slot slams shut. When our food is ready, it's placed into a black kettle mounted in the wall -- the pot's back half is chopped off so that it spins like a revolving door to deliver our goodies.

Like a life sentence, Hart & Soul's initially daunting service will eventually grow on you. The food sure does -- our fave's a mighty fine fried catfish for less than $6, accompanied by two side dishes and a cornbread muffin.

Besides, this time we're on the right side of the wall. We get to walk away when we're done with dinner.

Best Room With a View

Wrigley Mansion

Must be nice to be rich. We've never gotten a 50th wedding anniversary gift like the one Ada Wrigley received from her husband, William, back in 1929. For his beloved bride, the chewing-gum magnate put a bow on a $1.2 million mansion, perched high atop a hill overlooking the Arizona Biltmore.

But we can pretend we're well-off, since current owner Geordie Hormel found a loophole in regulations that require the home be used as a private club only. Membership in Hormel's club costs only $10 a year (and he donates that to local charities).

The Wrigley Mansion restaurant has terrific food -- delicacies like dark ale poached gulf prawns with peppered papaya cocktail; seared fois gras and lobster medallion on artichoke and asparagus salad; baked salmon scaloppini stuffed with Maine lobster tail; and king crab legs with lemon grass, Chardonnay and Pinot Noir sauce.

Just as delicious, though, are the stunning views of this originally named "La Colina Solana" -- the sunny hill. We feel like old Ada must have felt when we dine, taking in the dramatic, 360-degree view of downtown Phoenix, Camelback Mountain, the Squaw Peak preserve and the Valley beyond.

The choice of where to indulge in a final meal before bowing to Jenny Craig is simple: Mrs. White's.

There's no need to get gourmet with descriptions here -- just imagine the best-ever Southern fried chicken, pork chops, smothered chicken, chicken and dumplings, chicken-fried steak and fried fish ever to bless your tongue. Picture great puddles of gravy, black-eyed peas, greens and home-style peach cobbler. Visualize massive portions that crowd every inch of the plate.

The meal is chosen from a menu written on the wall, surrounded by celebrity graffiti. (The Phoenix Suns are said to love this place -- sure, they can work it off on the court.) When you're done, tell the friendly folks behind the counter what you had, and they'll ring you up. They trust you not to cheat.

It's the millennium. Babies know how to use computers. Pets have cell phones. Great-grandmothers surf the Net. Sometimes it all seems so crazy.

When we need an escape, we disappear into Somewhere in Time. The clock has stopped in this quaint shop, with creaking hardwood floors, the scent of roses in the air, and a comforting jumble of Victorian furniture, knickknacks and porcelain dolls. Even the shop owner's name makes us think of quieter, gentler days: Mary Alexander.

We take a seat at one of the half-dozen lace-topped tables (elbows off, mind you). It's time for tea, and we take our English Breakfast with just a few drops of milk, the way our grandma used to. Somewhere in Time uses only loose-leaf blend teas, of course, poured from antique pots into delicate china cups.

Lunch is lovely, with a plentiful assortment of classic sandwiches like Black Forest ham with cream cheese; egg salad with fresh chives; cucumber with sweet creamery butter; chicken and tuna salads; cream cheese with olives; and creamery butter with fresh raspberry preserves. There are homemade scones with lemon curd and clotted cream, plus wickedly wonderful cakes.

Pleasures like this never go out of style.

For some folks, a romantic restaurant means being insulated from the world, tucked in a tiny space, preferably sitting in the dark.

That's all well and good, but we can get that at home, especially when we don't pay our APS bill. No, for us, romance thrives in a little more open setting, where we can show off the love of our lives, and catch just a smidgen of adrenaline from the universe. It helps us connect, knowing that through the craziest of times, we always have each other.

Convivo is perfect for us, combining coziness with the camaraderie of our fellow guests, to mysterious success. The cafe is basically a little box, set with white cloth tables. But it's been made romantically slinky, with sensuous, curving carpet-to-tile borders, and serpentine coffered ceilings. The soft flowing layout makes us want to glide.

The lighting is dark, in a soft, filtered kind of way. It makes us feel gentle, sultry. There's a quiet hum of people talking all around us, but it's a respectful restraint that's somehow soothing.

And the food -- it swells our hearts with passion for life and each other. Northwest Golden Chanterelle mushrooms in porcini tarragon cream are luxurious. Even a simple chicken breast rises to grace, grilled with balsamic onions and mustard butter, creamy Yukon Gold potato and goat cheese gratin.

Newcomers may find it hard to believe, but there once was a time when the Valley offered more than stucco-wrapped pink houses with red-tile roofs. It's true. Once upon a time, we had a lovely landscape of eclectic, Victorian-inspired homes.

You can still see one of those relics, a charming, 1920s cottage that now houses some of the Valley's most satisfying contemporary American food.

The visual tour starts in a relaxed, trellised garden leading to the bungalow with wrap-around veranda. Inside is a virtual Victorian revival of lace curtains and antiques. The floor plan hasn't been disturbed; a dozen or so tables nest in hallways and two small rooms.

It's not exactly grandma's cooking -- unless she was a whiz with grilled shrimp with Thai pesto and curried pecans, roast duck breast and pears in port, or stuffed eggplant lasagna with goat cheese and sun-dried tomatoes.

House of Tricks is a perfect mix: a cuisine that speaks of Phoenix's modern pleasures, in a setting that lovingly embraces its past.

T. Cook's at the Royal Palms Hotel

Just walking through the Royal Palms makes us swoon. Built around a 1929 Mediterranean-style mansion, this grand property flourishes with exotic palms, lush shrubs, specimen trees, cactuses and masses of flowers.

T. Cook's is set to the back of an intimate, fountain-strewn courtyard, and decorated with breathtaking antiques. But what grabs our attention, even more so than the spectacular view of Camelback Mountain, is the restaurant's showcase fireplace. It spans a back wall, and roasts to perfection meats, poultry, vegetables and seafood in seasonal dishes from Barcelona, Spain, and the Tuscan region of Italy.

This fireplace brings forth the ultimate romantic meal: a dinner served for two, meaning cozy communing with our partner. Aptly called the "fireplace platter to share," our favorite entree comes brimming with spit-roasted chicken, rosemary tied pork loin and Mediterranean paella.

This only after feasting on a "Mediterranean antipasto platter to share," though, and before curling up with a cheese course finale, featuring Exploratore, Italian Fontina, Spanish Goat and Roquefort cheeses with sliced pear and fruit sauces -- ample enough for us both.

Love is not only blind, it tastes great.

The Melting Pot

We, of course, are so universally adored that no one would ever consider dumping us. But should someone ever do us wrong, prompting us to end a relationship in a dramatic fashion, we'll be doing it at the Melting Pot.

The setting is discreet -- there's even a private dining table closed off with velvet curtains -- and the fondue menu gives us all the right tools for revenge. First, the table is equipped with a built-in, sizzling hot burner top (no back talk, please!). We can order the traditional fondue setup, with a caldron of nuclear hot boiling oil.

And there's an extra bonus for us: The food is delicious. Bubbling cheeses come with fresh breads, vegetables and fruit. Court-bouillon, oil or coq au vin fondues heat up meats, poultry, seafood and even pot stickers. And chocolate fondue makes parting such sweet sorrow, dunked with cakes, fruits and brownies.

To our ex, we simply say, "Eat your heart out, baby." (And count yourself lucky you didn't wind up with a lapful of molten fromage.)

Crazy Ed's Satisfied Frog

First-time visitors to Arizona give us a chance to go to some of those slightly cheesy places we secretly love but never get to on our own.

The Satisfied Frog is one of those; it's an outright hoot, and it gives our guests that warm, Western welcome they're expecting. It's comfy, casual -- the kind of place where you could feed the dog under the table, if health codes allowed Fido through the front door.

Tablecloths are checkered. There's sawdust on the floor. Corny sayings are plastered all over the restaurant. The building's set back in what looks like a frontier town right off of a movie set (howling coyote souvenirs all around). Tourists love the Goat Sucker Saloon and the beer garden, featuring the honky tonk piano.

And the cowboy grub here is down-home delicious. Steaks, fish, shrimp, chicken, hamburgers, Mexican dishes and mesquite-smoked barbecue come in such enormous portions, we stagger when we leave. We initiate our guests with the signature deep-fried chiles, and a spicy cream of chile soup.

If that doesn't get us stumbling, the Frog's micro-brewed beer sure will. We've guzzled more than our share of Original Cave Creek Chili Beer, a golden, skunk-and-pepper-flavored ale with a whole chile pepper lurking at the bottom.

Satisfied? You betcha.

Best Place to Have Your Portrait Painted While Eating Dinner

Forget those goofy Polaroid photos many tourist restaurants try to push on you. For a true memoir of a fun evening out, nothing beats the original portraits created by Beeloe's "resident" artists.

In this funky restaurant/art gallery, local artists and craftspeople create their unique pieces amid the din of raucous diners and live jazz, seven nights a week. Their works are displayed around the restaurant in the form of paintings, drawings, photographs, wood carvings, metal sculptures and jewelry. Prices for displayed artwork range from $50 to $2,000.

Diners are encouraged to interact with the artists, and we have, batting our eyelashes to request our own personal portrait. Ponying up a lot of green is also required. Each artist can charge whatever the traffic will bear; a friend of ours had hers done for $50.

Meanwhile, Beeloe's art-inspired dishes are a culinary experience, too -- Matisse's Soup of Yesterday, Whistler's Green Chile Queso Dip, Postmodern Pepperoni Pizza, Dada Caesar and The Muse Pork Loin VSOP.

Just remember, please -- great art takes time, and Beeloe's independent artists aren't obligated to capture your mug in paint. But, if you're ready to flash the cash and wait a little, there's a good chance you'll go home immortalized, and fit to be framed.

Anthony Angelini operates his cafe under the quaint premise that all of us are potential hunks, if we will just buckle down. Well, a guy can dream.

Still, with his impressive pecs and other musculature, Anthony himself looks like he's been eating right and lifting major weights for years.

We'll stick with the eats part, and as for exercise, we'll limit ours to jogging to his Scottsdale Road buff-et.

Anthony is generous with his portions, fair with his prices, and takes his restaurant's fitness theme seriously. We especially love his breakfast wrap, chock-full of veggies, cheese and eggs and dubbed the "Arnold," after you-know-who. Other selections include the "Venice Beach" and the "Flex" -- chicken and turkey sandwiches, respectively. And who cares that the "Dead Lift" -- a protein drink that contains more egg whites in it than we could count -- costs about the same as a burger? After pumping iron, you'll happily pick up the check here.

McCormick & Schmick's

We love a bargain. We love beer. We love bars. And we love burgers. So it makes sense that we're at our happiest when we're perched on a stool in the bar at McCormick & Schmick's.

This upscale place is known for its fresh seafood, with diners paying upward of $25 for a nice, aquatic entree. Good enough, but we won't pay more than $2 for our dinner when we eat at the bar.

Du jour items during happy hour include a quarter-pound cheeseburger with fries, oyster shooters and seafood chili. The cost? Just $1.95 with a one-drink minimum.

They're primo eats, too, not that prefab, fresh-from-the-freezer-bag stuff other bars try to fool us with.

How does McCormick & Schmick's make money on the deal? We don't know. We don't care. Just save us a seat.

Best Chain Restaurant

Roy's Pacific Rim Cuisine

Most people crave consistency. They seek out the safety of sameness. They want to know that no matter where they go, they haven't really left home. That in part explains the incredible popularity of chain restaurants. It's comforting to know that dinner at a chain will be the same whether you're in New York, Alaska, Turkey or Tokyo.

When the experience is as good as it is at Roy's, we're happy to stop in for a visit no matter where we are. We love the high-energy atmosphere and the buzzing exhibition kitchen. The clever menu planners know how to keep us interested. There's nothing routine about such vigorous dishes as crispy crab cakes with togarashi butter sauce, charbroiled garlic grain mustard beef short ribs and Mongolian barbecue lamb chops.

Roy's has it all -- good looks, good times and good food. It's like an old friend when we're traveling, and even when we're at home.

Roy's is no chain of fools.

Best Place to Watch First Wives and Lounge Lizards

Go to this sultry joint for the people-watching -- parades of twentysomething, swing-dancing poseurs rubbing shoulders with aging lounge lizards in crazy-wide lapels. Both are perfectly in style with the 1940s and "Golden Age of Jazz" theme at this funky supper club.

The kids, some decked out in sporty hats and coats, swing to the live sounds of Alice Tatum and Margo Reed. The singers croon smoky tributes to Duke Ellington, Benny Goodman, Charlie Parker, Nat "King" Cole and, of course, Frank Sinatra.

Keep an eye on the older folks hanging at the bar, which looks like it could collapse under the crush of 40-plus first wives and Wayne Newton look-alikes. Hair extensions tacked into bouffants? Tight white Guess jeans, paired with $400 slingback shoes and Prada bags? Toupees and George Hamilton tans?

The Velvet Room is the perfect catwalk for these guys and gals.

Best Place to Catch a Wave

Sometimes, we're surfing for a fast, simple, inexpensive supper. That's when we say "Aloha!" to the Hawaiian-themed kitchen of the same name.

Short of the slow-roasted sow you'll find at a South Pacific luau, there's nothing better than the luscious Kalua pig served here -- tender, subdued and tossed with steamed cabbage. Breaded fish fillet and charbroiled salmon are definitely fast-food menu upgrades, served plain and fresh.

But our favorite is saimin, a ramenlike noodle created by islanders. We love the skinny, crinkly noodles in a yummy, warm toss of slender Japanese fish cake strips, char sui bits, chopped cabbage and shrimp sauce; or in soup with won tons, bok choy, char sui dumplings and fish cake.

Aloha Kitchen -- it's a shore thing.

Best Place for Old-Fashioned Tableside Preparation

Le Sans Souci

Sans souci is French for "without a care." That may be true for us, the lucky diners relaxing in this elegant French chateau, but not for the servers concentrating on preparing our elaborate meals right next to our tables.

These professionals, under the watchful eye of legendary Valley restaurateur Louis Germaine, are dedicated to making sure every tableside trick results in a memorable, classical French meal (longtime residents will remember Germaine from his 35 years owning Chez Louis in Scottsdale).

Something about seeing -- and smelling -- our dinner as it's prepared makes it taste even better. We watch as our server rolls up his geridon (carved wood cart), sets out his rochard (small propane burner), and arranges his mis-en-place (ingredients) to make our spinach salad for two. He sizzles chopped bacon in Worcestershire, mustard and red wine vinegar in sugar, then dumps it all over a big wooden bowl of fresh greens.

As we eat, he works up our entrees, steak Diane, and les tresors de la mer (seafood). Pounded flat filet mignon cooks in bubbling butter, mushrooms, garlic, onions and capers added from little ramekins on the cart. Then our server splashes the pan with brandy and sherry, inciting great flames that leap as high as his eyebrows. A dab of Grey Poupon and the steak is complete. Shrimp, lobster tail and scallops take barely a minute to cook, soaking up lots of sherry and brandy.

Bananas Foster bring more fireworks, torching crème de banana, sherry, butter, cinnamon and brown sugar that spits out sparks when tossed to the flames.

It's a kinder, gentler Arizona these days, where upscale restaurants don't limit themselves to impressing us with exotica from faraway lands.

The new fine dining experience celebrates the products born and raised in our own Valley of the Sun. Chefs like Rancho Pinot's Chrysa Kaufman insist on using locally grown or raised organic produce, eggs and dairy products as much as possible.

That's why we can usually be assured that the produce we're enjoying in Kaufman's dishes, such as wood-oven roasted vegetables with crispy risotto-wheatberry cake, came from a local grower. Or that the quails we're feasting on were raised at a local farm.

Rancho Pinot celebrates Arizona heritage in the 21st century, with its funky cowboy-chic interior. It celebrates the take-it-easy Western past, with Kaufman's commitment to "Slow Food," an international organization that promotes cooking from scratch, using the freshest, artisan boutique ingredients.

Of course, everything tastes magical, from roasted beets with toasted almonds, sheep's milk feta and spicy greens to Nonni's Sunday Chicken, braised with white wine, mushrooms, herbs and onion over toasted polenta.

Best Drive-Through Gourmet Food

Can't face another drive-through meal of burger and fries?

No problem. Latino Express comes to your rescue with gourmet, South American treats created by local chef Erasmo "Razz" Kamnitzer, owner of the upscale Razz's in Scottsdale.

Housed in a former Jack in the Box, the drive-through accommodates gourmet motorists with a decidedly un-fast-food menu featuring the likes of grilled ostrich, mofongo (charbroiled chicken and beans) and tostones (fried plantains). Traditional grease 'n' go fare, this isn't. The few fried items are virtually oil-free, and many dishes (most dinners are priced at $7 or less) are healthful combinations of fresh grilled meats, veggies, rice and beans in light sauces.

The status of appetizers has changed in American restaurants. It used to be that most starters were mild-mannered offerings, designed to keep diners quiet while the kitchen had time to work on the main event. Appetizers used to be little more than tossed salad, soup, deep-fried veggies and, in a nice place, perhaps a shrimp cocktail.

Today, in good restaurants, appetizers are works of art. They're prepared as meticulously and creatively as entrees -- sometimes even more so.

At Ridge Cafe, however, appetizers aren't just as elaborate as entrees, they're almost as big -- at half the price of a full dinner.

The chefs here serve up a generous asparagus and shrimp combo, with beautiful veggies served cool and crisp under two truly jumbo shrimp in a tidy, red onion and dill vinaigrette. What could be better than a massive chile relleno, a pristine pasilla pepper in lacy batter stuffed with whole mushroom, chicken breast and jack cheese? And how about a mussel appetizer, bringing a generous baker's dozen of bivalves in a savory white wine, tomato, garlic and fennel broth?

A few slices of bread, a glass of wine, and there's simply no room left in our bellies. Change is good, we've been told. We have to agree.

It's all a matter of priorities. Do you want to live 90 years eating Dairy Queen, or 40 years eating Ritter's? When given the choice to Live (fat) Free or Die, we and our Dionysian fat friends invariably choose the latter. Ritter's gourmet custard (glorified ice cream) is sumptuous, voluptuous and fat on rich flavor. This strangely retro little malt shop in Gilbert offers daily specials that, cumulatively, are now referred to by area residents as "Murderer's Row."

All couscous is not created equal. Some are achingly dry, like herby dust. Some are sadly sodden, like seasoned moss. Some, like the kind served at Bravo Bistro, are spectacular.

Bravo's couscous is Moroccan, which means it's larger and moister than the tiny seffa variety served around town. These caper-size beauties pop in the mouths, exploding with wholesome, grainy goodness. Bravo serves this dish with sautéed grilled chicken and fresh vegetables in an aromatic herb broth.

It's the couscous we choose.

Best Place for a Twilight Drink

It's a hefty drive -- some 35 miles north of downtown Phoenix -- and there's not a lot to look at on the lonely stretch of highway leading to this massive master-planned community in the middle of nowhere.

But that's exactly what makes the final destination so spectacular. Once parked on the patio at Persimmon, there's nothing to compete with the views of Daisy Mountain, soaring almost 3,200 feet above the desert floor. No towering buildings. No sense of the pulsing, gasping rat race we've left at the far fringes of Phoenix. Once the sun goes down, there aren't any city lights to compete with the twinkling stars above -- just a few muted porch bulbs from homes tucked across the yawning golf course that serves as Persimmon's backyard.

The grill faces west, meaning we're in for spectacular sunsets. The country club has yet to be overrun with residents, meaning we're able to enjoy some peace and quiet with our Pinot Grigio. The outdoor furniture is fancy, cushy and clumped in private tête-à-têtes.

And for now, the view is free. The grill is open to the public. Now, that's worth a toast.

Why are pizzas in New York so insanely large? It's not like there's a lot of spare room in this crowded city. The typical Gotham City pie is so immense that even someone the size of the Statue of Liberty would have difficulty scarfing down more than a few slices.

But the real head-scratcher is why many of the pizzas found in the Valley are such dainty little numbers. This is the land of wide-open spaces, where tough-talking cowboys cuddle with rattlesnakes and keep company with scorpions. Yet here, thin crust rules, slices require just one hand, and many places top their pizzas with -- gasp! -- designer stuff like barbecue sauce, feta, goat cheese and shrimp.

When we're craving good, old-fashioned New York-style pie, we pick Pizzafarro's. There's nothing shy about these servings -- the 16-inch large is enough to feed a family of four. Pillowy-crusted slices are enormous. We can fold them for easier eating, but if we don't want delicious pizza oil dripping down our fronts, we're looking at using a knife and a fork.

Pizzafarro's doesn't believe in frou-frou, either. All our favorite toppings are there (even fresh anchovies), but the only nods to contemporary cuisine are artichokes and green chile.

Back up the SUV and fold down the seats. We're going to pick up a pie from Pizzafarro's.

At a time of night when other restaurants along Camelback's gourmet row have long since rolled up the kitchen, Barmouche sizzles with its first-rate, creative French cuisine. Midnight munchies include portobello lasagna with made-on-site mozzarella, ricotta, parmesan, goat cheese and spinach, an 18-ounce New York sirloin with choice of sides (Belgian frites and sweet-pea mashed potatoes are sublime) and a Scotch beef fall-apart steak in red wine gravy.

Even the sleepiest snacker will come wide awake with Barmouche's croque monsieur, combining hot ham, Gruyère cheese and Béchamel sauce in thick French bread. It's our pick, paired with a side of crisp, garden-fresh asparagus sautéed in butter.

Barmouche's restaurant is open until midnight seven days a week; the bar, which also serves food, remains open until 1 a.m.

You snooze, you lose.

This primo pie is not for wimps. The large pie (18 inches) is about two and a half inches thick, and weighs almost 20 pounds. The big and tall men among us may be able to wrestle the huge slice into their mouths, but the rest of us are forced to use utensils to avoid muscle strain in our elbows.

At Western, there's no skimping on toppings -- bubbly-crisp dough groans under the weight of barbecue chicken breast with pine nuts, or spinach, feta, olive, sun-dried tomato and pesto. The best seller is the Western Round-Up, with mushroom, pepperoni, salami, ham, peppers and onions (the meat is layered high and thin like a hoagie, then buried under a truckload of mozzarella).

And we like Western Pizza for its hours. It's not only open until 3 a.m. Thursdays through Saturdays (1 a.m. other days), it delivers until then, too. That's pretty macho.

After eating too many fair-to-middling versions of this Greek standard to remember, we were inclined to agree with Tina Turner when she sang. "We don't need another gyro."

Or something like that.

Of course, that was before we discovered the Hellenic heroes served up at Super Gyros. A two-handed feast of Olympian proportions, the generous mound of pressed lamb and beef is so juicy, we actually forget there's a side container of wonderful yogurt dressing until we're halfway through.

But don't you make the same mistake: As the sauce succulently soaks into the hot pita bread, it lends a tangy kick to the feta-topped meat that's fit for the gods. Super Gyro? Don't myth it.

Best Smoked Salmon Appetizer

Houston's Restaurant

Last year, Houston's unceremoniously removed its signature smoked salmon appetizer from the menu for a trial period. The reaction from customers was not a pretty thing. Folks whined and ranted to the waiters. They e-mailed nasty-grams to the corporate powers that be. Some even threatened to boycott the restaurant. They mourned the loss of the silky, melt-in-your-mouth fish flesh Houston's elegantly pairs with toast points and a side of herbed mayo, a combo that, with a glass of good wine, makes a meal in itself.

Apparently, we weren't the only ones disappointed with Houston's wrong-headed marketing decision, so the salmon's back on the menu again in Phoenix. It's the best this side of Seattle.

Best Sweet Potato Pie

Got a hankerin' for a real slice of sweet potato pie? Hightail it down to this cozy Cajun hole-in-the-wall where Chef Bubba Stephenson bakes a pie fit for Queen Ida herself.

Bubba lines a delicate homemade pie crust with a hearty, spicy filling made from fresh, not canned, sweet potatoes. Each generous slice (about a quarter of a pie) is served warm and slathered with plenty of whipped cream. After one bite, you'll feel as if you're back in the bayou. Sweet zydeco!

Mention "greens" in Scottsdale and most people will think you're talking about a golf course.

But that was before Marcella's opened for business, dishing out the verdant veggies that are a hallmark of any soul food menu. Kale, cabbage or collard, they're all prepared essentially the same way. Steamed with bacon or ham hocks until soft and tender, the leafy treats kick into high gear with the addition of garlic, and are then served in a steaming bowl of potent pot likker.

Forget chicken soup for the soul -- Marcella's greens will keep you in the pink.

Honey Bear's BBQ

Honey Bear's owners Mark Smith and Gary Clark started cooking their mouth-watering barbecue out of their apartment almost two decades ago, based on recipes from their grandmother. Later, they moved to their dimly lighted, no-frills digs on Van Buren. A few years back, success led them to open a new location on Central Avenue.

Today, their Tennessee-style barbecue continues to draw in diners, lured by the smells of smoking meat and simmering sauces.

Their slogan: "You don't need no teeth to eat our meat." That's true. Pulled pork, beef and chicken positively collapse before we can gnaw them down. Pork ribs and whole or half-chickens slip from the bone. Hot links -- well, these take a tooth or two to snap their firm casing and get to the spicy sausage within.

Our honey of a meal is a large combo sandwich of pork and chicken. It's not on the menu, but always happily accommodated. The massive mound of meat comes tucked in a soft bun and wrapped in tin foil. The foil's important -- it seals in the heat, keeping the bun warm. Spicy sauce is served on the side.

It's a barbecue we could bear to eat every single day.

This is the Southwest. How could we not honor the region's unofficial steak-house side dish? Particularly when they're as seductive as the barbecue pit beauties served at Joe's?

Forget those canned baked beans of backyard weenie roasts of yore. This is a killer combination uniting kidney, lima and navy legumes thickened with shards of cooked-on-site sausage, chicken and beef. They're served blissfully hot, are inexplicably cheap, and are so very satisfying.

Bean there, done that? Not until you've tried Joe's.

You can grab an after-dinner latte and biscotti just about anywhere these days. But you'll gladly drive past strip mall coffeeterias and shopping center java joints to relax in this charming little spot.

Located just north of Main Street in downtown Mesa, its sparkling white decorative lights will lure you in. A trellis, framed by fragrant vines and trees, leads you into the lush front yard of a restored turn-of-the-century home. Inside the Victorian-themed house, you will find the usual coffee and tea offerings, as well as homemade muffins, cakes, pies and other pastries. You can browse in the gift shop or enjoy the free entertainment -- singers, musicians and comedians.

But it's better to head outside. Whether you're in a large group or a party of two, there's a spot for you, on the porch or gazebo out front or beside a tinkling fountain among the backyard ficus trees. And as you banter over the biscotti, remember -- it's the coffee talking.

You haven't eaten chicken-fried steak until you've had it here at this 15-year-old bastion of beef 'n' batter. Smothered in thick, white gravy, this pair of pounded beef patties crackles with crunchy, deep-fried cholesterol nirvana. The chicken-fried chicken is also incredible, as are several other enormously tasty breaded-and-fried items. First-time visitors won't want to miss the wall of chili (hundreds of vintage cans of the stuff from all over the country) or the colorful tribute to Texas cuties The Kilgore College Rangerettes. Ask for Helena, whose cheerful chatter and super-attentive service will make your stay that much more down-home.

Good soup is more than a meal; it's comfort. When the Soup Doctor prepares it, it cures whatever ails you, too. The Soup Doctor is Gilles Desrochers, a wild-haired, rumpled chef who makes some of the most magical soups (72 homemade varieties) we've had the pleasure of slurping.

That's him behind the counter, chopping garden loads of fresh vegetables that grace so many of his broths, and yelling at customers, "Eat more soup! Now!" This guy's not shy, smiling and shouting at guests who take too long to order.

With up to a dozen varieties offered daily, choosing can be a challenge. All the soups are made from scratch with recipes handed down from the Doctor's mother and grandmother. Vegetable beef barley swims with whole mushrooms and tender steak in a rich tomato broth. Chicken noodle is stuffed with shell pasta, cooked to perfectly slimy softness. And pasta fagioli is smitten with soft bean, orzo and celery in a salty base.

Take it from the Soup Doctor: You need more soup. Now!

Fry bread is a part of Arizona's heritage, a symbol of Indian intertribal unity. Unfortunately, however, this obscenely caloric totem is usually found only at state and county fairs.

Or at least that used to be the case before this fry bread fortress pitched tent inside the west Valley's SwapMart.

Angelina's makes pouf-perfect fry bread from a recipe handed down through generations of Native Americans, rolling the dough, working it into ovals, puncturing its middle and dropping it into fryers. The bread emerges glistening, puffy and impossibly light. Topping options include vigorously seasoned red or green chile, ground or shredded beef and shredded white meat chicken, as well as simple shakes of powdered sugar and sticky squeezings of honey.

Alas, the swap mart is only open on weekends, but we're willing to wait: It lends new meaning to TGIF -- Thank God It's Fryday.

Best Private Party Room

Dick's Hideaway

To say that this private party room is a little hole in the wall is entirely accurate. It's hidden, in fact, behind a door set inconspicuously into the paneled wood wall of the tiny bar called Dick's Hideaway. There's no sign anywhere -- not even outside, for the bar itself. You've just got to know where to look.

The search is worth the effort, unveiling a completely charming, comfortable room seating up to 25 people around a grand, copper-topped table and at comfy booth tables lining the wine-bottle-lined walls. Our favorite spot is curled up in front of the kiva fireplace.

As pretty as the place is, the experience is low-key. Dick's Hideaway is brought to us by the folks at Richardson's, and that's the same menu from which we select. That means creative New Mexican dishes like chimayo chicken (stuffed with spinach, sun-dried tomato, poblano chile and asiago cheese); pork tenderloin (marinated and pecan grilled with red and green chile jelly); and even posole (hominy and pork in red chile broth).

Best of all, Dick's Hideaway doesn't stick guests with a fixed menu, like most private rooms do. Everything's flexible -- individual meals, custom requests, open or hosted bar service, even birthday cake.

Now that's casual with class.

Best Rotisserie Chicken

Hearty Hen Cafe

Hearty Hen Cafe boasts that it serves home-cooked meals. Perhaps, if your home includes a huge brick oven, speared by gleaming steel rotisserie wands stacked with a dozen twirling chickens over a roaring, gas-fed fire.

The birds are lightly rubbed with paprika and spices, then roasted in their glass-fronted coffin for up to three and a half hours. The fat drips through the skin, touching the chicken with its rich flavors, then drips harmlessly into a metal pan below.

The result? A tender, juicy fowl so near-greaseless (and Heart Smart Restaurant endorsed) that we may never eat chicken out of a bucket again.

Best Potato Salad

Sabuddy Israeli Restaurant

Being an Israeli restaurant, this exceedingly cool little place features, logically enough, a variety of European dishes rethought in Middle Eastern terms. It's very likely the only place in town where you can find schnitzel and falafel on the same menu. You can also find our favorite riff on the picnic lunch staple: Russian-style, fresh and zingy, loaded with carrots, green peas, eggs, mayonnaise and pickles. As good as are Sabuddy's other sides, which include baba ghanouj, tabbouleh, labne and a Greek-ish eggplant purée, the spud salad is the best.

Like all other salads, it can be ordered in small or large portions ($2.45 and $3.45, respectively), or by the pound ($5.95) as carry-out.

Tuber or not tuber? At Sabuddy, that is not the question.

Best Private Dining Room, Upscale

It's so hard to get good help. Sometimes the serfs at our castle revolt against us, and refuse to cater the elaborate dinner parties we like to throw. How gauche.

No matter, we've got a back-up with the ultra-luxe private dining room we can reserve at the Phoenician resort. Happily, it looks just like a castle, replete with Renaissance-era decor, barrel-vaulted ceilings, brick archways, European antiques and a full wall of wines. It's just spacious enough -- we can park up to 16 of our friends' premier posteriors on tapestry-upholstered chairs.

Adjacent to the resort's fabulous Terrace Dining Room, it also serves as the Terrace's working wine cellar. And when it's time to eat, we can have anything we want from the resort's flagship restaurant, Mary Elaine's. The magnificent modern French cuisine and highly polished service are just what we need to take our minds off our employment troubles at home.

It makes for such a peasant -- uh, pleasant -- evening out.

Best Vegetables

Quiessence Culinary Center

One of our favorite Lost in Space episodes of all time is when Dr. Smith is turned into a stalk of celery by an unfriendly planet dweller. When his space shipmates come to his rescue, he demurs, waxing on how lovely it is to be a vegetable -- "so cool, so green."

After tasting the produce of Quiessence chef-farmer Hallie Harron, we're right there in the dirt with him.

These are veggies of uncompromising virtue, grown under Harron's own hand in pretty little beds scattered across a 12-acre farm. The focus of her family-style meals, they're selected based on what the garden offers each day.

The only thing better than being a stalk of celery would be to exist as Harron's fennel, braised al dente and glossed with a thin red pepper marmalade. Or as her albino beets, roasted shallots, gloriously sweet and sour roasted onions, rich flavored grape tomatoes, or a curl of earthy daikon radish.

Finish our vegetables? Just try to stop us.

Best Domestic Liver

Don & Charlie's

Let others worry about cholesterol and such: We want rich, satisfying foods. We want to line our gullets with the good stuff. The higher the fat, the better.

That makes Don & Charlie's pté a winner in our world. The fact that it's served free as a prelude to a gut-busting steak dinner including salad, potatoes and all the bread we can handle doesn't hurt, either.

The appetizer is pure beef liver, smooth but studded here and there with little liver chunks for interesting texture. It's served in the classic way, crumbled with hard-boiled egg, cozied up with lots of chopped white onion, and plopped in a big scoop on romaine. Sides of roasted red pepper and hot pepper tomatoes cut the richness when we need it. The pté's almost a meal in itself, spread on crisp lahvosh, rye bread and toast crisps.

At Don & Charlie's, we liver for the moment.

We almost broke down in tears when, at a recent food show, we saw vendors hawking the "newest trend in spaghetti for upscale restaurants seeking convenience" -- premade, precooked gourmet pasta that's vacuum-packed and ready to serve after two minutes in the microwave.

It's reassuring to know that any salesman trying to push these pseudo-pasta products on the folks at Il Pescatore would likely find a horse's head in his bed. That's because this charming, almost Victorian-looking restaurant is dedicated to excellence in the kitchen. All pastas are made fresh, from traditional family recipes.

Knowing that variety is the spice of life, Il Pescatore offers plenty of choices, too. Our favorite (fresh, of course) sauces, vegetables, meats and seafood can be paired with our heart's desire of cappellini, farfalle, fettuccini, gnocchi, linguini, penne, ravioli, rigatoni or tortellini.

We don't want pasta fasta. We want Il Pescatore, where they take the time to care.

Best Sandwiches

D'Atri's Cinema Paradiso

A hero may be nothing but a sandwich, but at D'Atri's Cinema Paradiso, a sandwich is nothing short of a feast.

With her compact menu of eight hot sandwiches, bubbly owner/TV personality Jan D'Atri has elevated a simple meal to an art form. How else to describe massive monuments of D'Atri's own Italian sausage, roasted chicken breast, marinated steak and more, all of it served in focaccia made from an old family restaurant? Our personal favorite is a two-fisted monster groaning with salami, ham, pastrami, mozzarella and provolone.

And while some pseudo-sandwicheries may try to sneak by, heating with a pan or cooktop, D'Atri dedicates two panini-style griddles to her bundles, grilling breads, meats and fresh veggies before closing the sandwiches into the hot presses.

An added bonus? When the mood strikes, D'Atri's been known to serenade diners with an accordion. Tasty!

But seriously, ladies, when it comes time to tell the folks you're in the family way without the benefit of wedlock, we can't think of a better place to bite the bullet than this clamorous pasta palace.

With dishes clanking, an opera singer wailing and other customers shouting to be heard above the convivial din, your parents will soon be lulled into a state of idyllic catatonia. And when you do break the news, chances are the only reaction will be, "I'm sorry, dear. What did you say?"

And the food isn't bad, either. Dig in -- you're eating for two.

Best Brisket Sandwich

Where's the brisket?

In the Valley, at Miracle Mile Deli.

A Valley tradition since 1949, Miracle Mile understands the importance of slow cooking for optimum flavor -- and of lightning-fast service when the crowds arrive.

By the time the doors open for lunch in this '60s-style deli, the brisket meat has been simmering for hours in its own juices. It's been sliced just thin enough for texture and piled in huge mounds in warming trays at the cafeteria-style counter, waiting for us as it bubbles to tender perfection in additional juices.

A server grabs the best pieces with his tongs, plops it on our plate and sends it down the line. And mere minutes after we arrive, we're smacking our lips over the beautiful brisket, tucked into a fresh, sweet onion roll. We sop up the juices with our French fries, alternating bites of mild beef with the tang of a sharp, crisp pickle.

Brisket, served this good, and this fast? It can only be a Miracle.

Best Aardvark Pot Pie

Mary Richardson's Country Pot Pies

Well, okay, we haven't actually tasted the aardvark. It's right there on the menu, though, under "Special Order Pot Pies": "Aardvark (in season)." The man behind the counter of this eccentric little joint in an East Indian School strip mall, who claims the Mary R. of the name as "me sainted mother," will only smile coyly when asked when aardvark season is, so we suspect he's funnin' us.

The more conventional chicken pot pies at Mary Richardson's, however, are sublime -- succulent meat in fine, savory gravy, housed within a wonderfully hearty crust. The side dishes here are essential, as well -- whipped potatoes, a splendid crunchy coleslaw and a first-rate homemade applesauce. Get the #3 meal, which entitles you to a pot pie plus all three of the sides, for $6.15. There are also tasty apple, cherry, peach and blueberry pot pies for dessert, as well as tarts. On Wednesdays and Thursdays, there's a Burgundy mushroom beef pot pie, and with 24 hours' notice, you can get such more-plausible-than-aardvark special order pies as vegetarian, turkey, lamb and even seafood.

Best Meatball Sandwich

Pasta Brioni

There are sandwiches, and then there are sandwiches. And then there's Pasta Brioni's meatball-and-bread concoction, which, while billed as a sandwich, is actually an entire meal that just happens to be tucked into a roll.

The sandwich is huge, of course. But it's a gentle giant, showcasing the old-fashioned Italian cooking that's largely disappeared in the era of cheese-stuffed pizza crusts.

The sauce is mellow, not too spicy, and not so soggy it makes the bread fall apart. The bread is crusty, lightly toasted and just thick enough to support its meatballs without getting in the way. And the meatballs? Orbs of beefy perfection, blending meat and restrained seasoning for a result so simply delicious it's almost extravagant.

Now let's have a big, two-handed salute to the ballsiest sandwich in town.

Best-Kept Restaurant Secret

Palm Court
Scottsdale Conference Resort

The Palm Court has been around for years, quietly catering to a dedicated clientele of conference and convention guests, plus savvy business lunchers who know a good thing when they see it. It's a little worn around the edges, as any grand old dame is wont to be.

But the lady's got more life than most folks may realize. Without abandoning the classic charm that's carried her all these years, the Palm Court surprises and delights with a very nicely done traditional Continental menu.

As the heavily draped windows, elaborate chandeliers and tuxedoed waiters suggest, the Palm Court relies on tradition. We get a kick out of the steak au poivre, flambéed tableside with cognac and tricolor peppercorns. Dover sole is filleted tableside to be topped with roasted almonds and parsley. And roast tenderloin is carved under our watchful eyes, then doused with béarnaise and Merlot sauces.

Plan to spend some time -- meals are prepared the old-fashioned way, to order. There's no need to rush -- our old friend, the Palm Court, isn't going anywhere soon.

Best Black Bean Soup

Havana Cafe

Fidel Castro-style fatigues, bad hangovers from Bacardi rum, Elián Gonzalez -- these are a few of our favorite Cuban things. But none can hold a candle to good Cuban black bean soup, a Caribbean classic raised to a memorable art form by Havana Cafe. Originally hailing from Havana themselves, cafe owners B.J. and Gilbert Hernandez must be genetically predisposed to knowing how to whip up an unbeatable, down-island version of sopa de frijoles negros, laced with generous amounts of garlic. Theirs is a thick, all-vegetarian black bean purée in which whole beans bob together with bits of red and green pepper and diced onion. A garnish of fresh cilantro is a decidedly non-authentic, Southwestern touch crowning this meal-size marvel, but who's complaining -- especially since a big bowl of it is a real steal for less than three U.S. bucks.

The Farm House

Farmers used to start their days in a big way. Stacks of pancakes as high as a silo. Backhoe loads of bacon. Troughs full of toast, spread thick with jam, butter and cheese. Eggs, ham, waffles.

Of course, nowadays even farmers can't afford to eat like that every day, much less we couch potatoes. But when we're feeling more than peckish in the a.m., we treat ourselves to the fantastic fare found at the Farm House.

The Farm House is part of an old working Arizona farm -- the barn and some working tractors are still out back. Tables are tucked in former bedrooms, plus the original parlor and living room. It's definitely a blast from the past, with jam jars on the tables, hardwood floors and period furniture.

Portions are farm-hand humongous: giant omelets with sausage, bacon and potato, and cinnamon rolls the size of wagon wheels. All our favorites are here -- home-style pancakes, waffles, muffins and more.

It's not fancy, but it's filling. And it tastes mighty fine. It's the good life, down on the farm.

The actual home of this Philly fave is the City of Brotherly Love. But here in the Valley, the local cheese steak fraternity pledges allegiance to Uncle Sam's.

The red-white-and-blue sandwich shop never lets us down, no matter the time of day, no matter how busy. And it gets very, very busy as soon as the doors open, until every seat is gone and it's standing room only at the takeout counter. Fear not: The cooks are speed demons, slapping great mounds of thin-sliced steak on a sizzling grill, and tossing the meat as its juices crackle and spit.

We love the huge portions (the half sandwich size is anybody else's whole). We love the choices (11 different steaks). We've picked our favorite -- loaded with fresh mushrooms, green pepper, onions, gooey white American cheese and hot peppers bursting the seams of a squishy Italian sub roll.

Uncle Sam's? We want you!

Best Turkey Sandwich

Arcadia Farms

Arcadia Farms likes to promote itself as the place for "ladies who lunch." No argument there -- if the ladies in question happen to eat like lumberjacks.

But even an ax-swinger with XY chromosomes is going to have his work cut out for him with the Farms' hefty turkey sandwich. Delectable, thick slabs of real, Thanksgiving-style roasted turkey breast (raised in Dewey, AZ) are piled high on country-style bread just shy of sourdough. A light slick of mayo gilds the gobbler, topped with roma tomato, sliced cucumber, pea shoots and baby lettuce.

(Hint: Sandwiches come with a choice of potato salad or organic greens. Order the potato salad, a plate load of red, skin-on chunks dotted with dill, bits of fresh bacon, parsley and scallion. Why? It's not only delicious, it comes on a bed of greens already.)

Best Italian Beef Sandwich

The DelPrincipe family first introduced its Italian beef recipe back in 1968, at a little store in Chicago. Fortunately for us, some of the family decided to escape the snow and set up shop in the Valley. Today, the Phoenix and Tempe locations are run by different family members, with friendly, often vocal competition between themselves to be better than the other.

Of course, the sandwiches are equally fabulous at both stores. This is top-quality stuff, bringing mounds of tooth tender beef thinly sliced and swimming in its own natural juices. We order ours "wet," for extra gravy to render the French roll into soggy, richly brothed bliss, and don't apologize for making an absolute mess of ourselves. That's what napkins are for.

Best Burger

The Chuck Box

There are plenty of places around town that make fancy hamburgers. They stuff them with exotic cheeses, lay them on designer buns and present highfalutin condiments like crushed mustard seed, garlic-infused mayonnaise and wasabi ketchup.

That's all well and good, but we prefer a far simpler approach to America's favorite sandwich -- an uncomplicated serving of quality ground beef, plopped on a fresh bun, then gussied up with a slice of American cheese and perhaps a spritz of yellow mustard. In short, just like the burgers served at the Chuck Box.

The cooks at this long-standing Valley burger biz don't put much into ceremony; they're too busy churning out fresh sandwiches to order. They peer at us from behind the blistering hot mesquite charcoal broiler, waiting patiently as we make the agonizing decision between the Big Juan (one-third pound, and named after Chuck Box's "beef engineer") and the Great Big Juan (one-half pound). We can add cheese (Swiss, American or Jalapeo Jack) and, if we're really feeling feisty, we can toss on some guacamole or bacon. There's also a choice of white or wheat buns, which are lightly toasted on the grill as the meat sizzles merrily away.

The burgers arrive virtually greaseless, presented on disposable plates atop plastic trays, to be dressed as we desire at the Chuck Box's condiment bar (the fanciest thing offered here is ranch dressing).

To paraphrase the immortal words of one noted burger connoisseur, "We'll gladly pay you Tuesday for a Chuck Box burger today."

If The Sound of Music had been set in Phoenix instead of Austria, Rodgers and Hammerstein would surely have scuttled the "a drink with jam and bread" lyric in favor of "ti -- a drink that's filled with ice."

And for our do-re-mi, you won't find a better glass of the ubiquitous chilled brew than, ironically, at a place best known for its java. The unofficial state drink (the average Phoenician swills untold gallons annually), iced tea à la Coffee Plantation is a brew that is true. Under most circumstances, "cheesy" is usually a pejorative term. But when applied to a description of the cheesecake at Christopher's, it's the highest praise possible.

The rival of any similar dessert in its New York deli homeland, this model is decadence on a plate -- huge, delectably creamy and, of course, obscenely caloric.

There are no superfluous toppings here, just a sprinkle of shaved almond, and plate companions of strawberry, blackberry and blueberry lightly drizzled with honey.

Galileo Bread Emporium

Chef-owner Giovanni Scorzo studied baking in Alassio near Genoa, Italy. He continues his craft in this magical little bakery tucked next to his award-winning restaurant Lecabaffi.

Everything here is to diet for, with sinfully rich tiramisu, zuppa inglese, cannoli, almond puff pastry, fruit tarts, and budino di riso (butter pastry topped with rice pudding; it makes our toes curl). We could make a meal out of Scorzo's dreamy bigne con Crema Pasticcera o Cioccolato (crème puffs oozing with custard or chocolate), topped off with a steaming cup of Torrefazione Italia coffee.

Sometimes, if you're feeling virtuous, go for the less-sweet but oh-so-satisfying focaccia with grapes or apples; or any of the crunchy biscotti, particularly the awesome anise.

There's no use sugar-coating it -- Galileo's got just the desserts we deserve.

The Chinese have long considered mushrooms to be aphrodisiacs. After tasting the seductive 'shrooms at Morton's, you may well agree.

Morton's takes an exotic blend of crimini, oyster, shiitake and portobello mushrooms, sautés them in a heady garlic herb butter, and serves them steaming in a ceramic crock. We get high just off the aroma, and melt when the mushrooms meet our mouths.

So toss away that book on how to meet chicks. Remember, guys: Girls just want to have fungi.

Best Garlic Dish

Garlic Custard at Cafe Terra Cotta

Garlic custard?!

Leave it Chef Donna Nordin to come up with something as innovative as this mystical, addictive flan. Impossibly silky, this breathtaking use of the stinking rose is abloom with mellow garlic. Served warm, the custard wobbles and shimmers as you poke it with your fork, then ladle great smears on thick, chewy pieces of the jalapeo cheese bread served alongside. Top it with sweet-'n'-spicy pepper salsa in vinaigrette, and dust the whole thing off with a sprinkle of herb-roasted hazelnuts. It's a taste explosion.

Now if Nordin could just create a breath mint-flavored mole sauce . . .

Best Antipasto

Va Bene Ristorante Italiano

If you're sneaking off for an intimate dinner with someone you're seeing on the sly, under no circumstances should you order the antipasto platter at Va Bene Ristorante Italiano. The minute your server ferries the gigantic appetizer platter out of the kitchen, every eye in the house will be on the table where you're sitting with your no-longer-inconspicuous other.

An unbelievable bargain at less than $9, this enormous starter plate overflows with basil-flecked fresh mozzarella slices, properly salty prosciutto shavings, garlicky grilled eggplant rounds, marinated whole mushrooms, tomato, and grilled onion, eggplant, zucchini and green pepper.

On the other hand, envious diners will probably be so busy ogling your mouth-watering orgy of pre-dinner treats that they won't give you a second look.

Best Frogs' Legs

Bistro Provence

The disturbing image of frogs on crutches won't go away, even years after seeing Kermit battle an evil fast-food frog-leg czar in the original Muppet movie. The vision is resurrected at Bistro Provence, which serves the legs intact, showing knobby knees and all.

It takes just one bite, however, to get over it. The amphibian flesh is firm, vaguely sweet and positively glowing with garlic marinade.

And Bistro Provence has a delicate hand with battering -- these gams are barely drifted through flour to offer a hint of crunch instead of the overwhelming crust found elsewhere. A half-dozen legs twirl like an Esther Williams revival in a pool of buttery, garlic-rich tomato salpicon. No crutches needed here; these legs stand on their own.

A long time ago, buffalo roamed the vast prairies of the West. Until someone killed most of them. Today, most people have to see their buffalo at the zoo.

But you can also find the beefy beast on the menu at the Arizona Kitchen, served in delicious glory. This buffalo is so good, it almost makes you understand why entire herds were once made into lunch meat. This buffalo, of course, is farm-raised -- it never knows it was born to run free.

The Kitchen takes a huge, juicy slab, slaps it on the grill and lays it in a pool of glamorous Cabernet vanilla bean chile negro sauce next to lip-smacking sweet-potato pudding.

The Kitchen's buffalo isn't just the other nice meat. It's a delicious little bit of the Old West, served in one of the state's oldest resorts.

Best Hummus

ZakeE Mediterranean Eatery

The Middle East is famous for its soothing dips, and ZakeE serves its hummus with creamy finesse.

Owner Sal Alqardahji takes pride in this dish, and it shows in every silky bite of garbanzo beans, lemon juice, garlic, olive oil and tahini (sesame seed paste), served with pita bread scoops.

ZakeE means "very delicious" in Arabic, Alqardahji tells us. We've got to agree.
