Somewhere between chef and restaurateur Aaron May opening Praying Monk in Scottsdale (and being locked out of his taco shop, Vitamin T, at CityScape after a landlord-tenant dispute) and restaurateur Sam Fox announcing the addition of a seafood concept to his second Arizona Culinary Dropout location in Phoenix, the two have hooked up for a pop-up dinner.
How, or better yet, why is this happening?
"Aaron and I are friends, and I have admired his work for a long time," Fox says. "A pop-up dinner is a nice way to collaborate and showcase Aaron's talents outside of his restaurants."
From 5:30 to 9:30 p.m. on Tuesday and Wednesday, May 15 and 16, May will be at Fox's Bar North at Kierland Commons creating a four-course dinner focusing on the flavors of spring.

May's four-course meal will feature three choices of vegetable, seafood, and meat dishes, plus a family-style dessert.
First course selections: Gina's local burrata with arugula, black olive oil and walnut pesto. Roasted baby fennel with lemon, shaved garlic and herbs. Young garlic soup with Queen Creek Olive Oil and spring onion.
Second course selections: Oven-roasted prawns with garlic and lemon. Olive oil poached halibut with wild asparagus and whole grain mustard pan jus. Diver scallops with raw artichoke salad, flowering chive, and jingle bell pepper.

Third course selections: Bistecca fiorentina with balsamico and roasted hedgehog mushrooms. Daube of spring lamb with fava beans and mint vinaigrette. Hudson Valley duck breast, pearl onion, and cherry agrodolce.
Dessert: Peach crostada with lavender gelato and candied lemon.
